What is your favorite summer fruit? I can't ever pick just one because they are all so amazing this time of year!
Two fruits that I always keep in my refrigerator in the summer are sweet, juicy peaches and ripe red strawberries. OK, let's be real, I keep ALL the summer fruits in my fridge all season, but peaches and strawberries are a couple of my favorite. Ok, fine, they're all my favorite.
But peaches and strawberries happen to go so beautifully together, like in this delicious strawberry peach burrata salad.

- To make the basil vinaigrette, blend all of the ingredients in a food processor or blender until smooth.

- Add the peach and strawberry slices to the bed of arugula. Pinch off pieces of the burrata and spread it over the salad. Sprinkle with almonds.
- Drizzle with the dressing and sprinkle with salt before serving.

Ingredients
Basil Vinaigrette:
- 1 cup fresh basil leaves, loosely packed
- 1 clove garlic
- 1 tbsp chopped shallot
- 2 tbsp white balsamic vinegar (or white wine vinegar)
- ¼ cup olive oil
- ½ tsp honey
- Pinch salt
Salad:
- ½ (5 oz) container baby arugula
- 1 large or 2 small peaches, thinly sliced
- 1 cup strawberries, sliced
- 4 oz burrata
- ¼ cup almonds (I use Marcona almonds)

- Coarse sea salt
