Strawberry Peach Salad with Burrata

What is your favorite summer fruit? I can't ever pick just one because they are all so amazing this time of year!

Two fruits that I always keep in my refrigerator in the summer are sweet, juicy peaches and ripe red strawberries. OK, let's be real, I keep ALL the summer fruits in my fridge all season, but peaches and strawberries are a couple of my favorite. Ok, fine, they're all my favorite.

But peaches and strawberries happen to go so beautifully together, like in this delicious strawberry peach burrata salad.

Why You'll Love This Strawberry Peach Salad

  • Sweet summer peaches and strawberries with extra creamy, luxurious burrata and peppery arugula make for one amazing salad. Seriously, you'll want to eat this salad on repeat all summer long.
  • A bright basil vinaigrette and crunchy almonds top it all off for the ultimate combination of flavors and textures.

How to Make Strawberry Peach Salad

  1. To make the basil vinaigrette, blend all of the ingredients in a food processor or blender until smooth. 
  2. To make the salad, place the arugula in a large bowl or on a serving platter. 
  3. Add the peach and strawberry slices to the bed of arugula. Pinch off pieces of the burrata and spread it over the salad. Sprinkle with almonds.
  4. Drizzle with the dressing and sprinkle with salt before serving.

Can I use other fruit in this salad?

I love the flavorful combination of fresh strawberries and peaches in this salad, but you certainly aren't limited to using just those two! Try experimenting with other summer produce like nectarines instead of peaches or raspberries instead of strawberries. The options are truly endless!

How long can you store this fruit salad?

For the best flavors and textures, I recommend enjoying this salad right away. But it can be stored in the refrigerator for up to 2 days, if necessary.

What to Serve with Strawberry Peach Salad

  • This strawberry peach salad pairs well with grilled protein. Some of my favorites include my grilled chicken with homemade romesco sauce, grilled caesar shrimp burgers, honey grilled pork chops, or grilled lamb!
  • This salad also works well on its own as a vegetarian lunch or light dinner with a baguette on the side.
  • Finish it off with a glass of rosé or crisp white wine for a deliciously sweet taste of summer goodness!

Ingredients

Basil Vinaigrette:

  • 1 cup fresh basil leaves, loosely packed
  • 1 clove garlic
  • 1 tbsp chopped shallot
  • 2 tbsp white balsamic vinegar (or white wine vinegar)
  • ¼ cup olive oil
  • ½ tsp honey
  • Pinch salt

Salad:

  • ½ (5 oz) container baby arugula
  • 1 large or 2 small peaches, thinly sliced
  • 1 cup strawberries, sliced
  • 4 oz burrata
  • ¼ cup almonds (I use Marcona almonds)
  • Basil Vinaigrette, to taste
  • Coarse sea salt

Instructions

  1. To make the vinaigrette, blend all ingredients in a food processor or blender until smooth. 
  2. To make the salad, add the arugula to a large bowl or serving platter. 
  3. Add peach and strawberry slices. Pinch off pieces of burrata to spread over the salad. Sprinkle with almonds.
