Strawberry Avocado Salad with Grilled Chicken

This strawberry grilled chicken salad is my version of the Barbi Salad at a little café in Fort Worth called McKinley's. It is one of my all-time favorites! I'm so glad it's finally strawberry season so I can share it with you! The original one doesn't have avocado, but I added it, because what meal isn't improved by adding avocado?

Strawberry Avocado Salad with Grilled Chicken

I know that strawberries usually go with spinach, but just give this strawberry avocado salad with crunchy romaine a chance, and I promise you will be hooked just like I am.

Strawberry Avocado Salad with Grilled Chicken

This delicious strawberry avocado salad features crisp romaine lettuce, juicy strawberries, creamy avocado, grilled chicken, and tangy goat cheese topped with sweet and crunchy candied pecans and an easy homemade poppy seed dressing. The combination is to die for, and so refreshing for summer. If you don't want to make the candied pecans, you can toast some plain pecans in the oven, and it will be just as delicious.

Ingredients

Scale
  • 3 cups chopped romaine lettuce
  • 1 cup sliced strawberries
  • ½ small avocado, sliced
  • ¼ cup crumbled goat cheese
  • 2 tbsp candied pecans (or toasted pecans)
  • 1 chicken breast (about 6 oz), grilled and sliced
  • ¼ cup poppy seed dressing

Instructions

  1. In a large bowl, combine romaine romaine, strawberries, avocado, goat cheese, and pecans. Toss with desired amount of poppy seed dressing.
  2. Divide salad between two bowls. Top with chicken and serve.

    Great minds think alike! So funny that I was also thinking strawberry salads are usually made w spinach but I made mine w arugula. Love mixing it up!
