A delicious, refreshing, and super-simple “zoodle” or zucchini noodle salad made with avocado, feta and tomatoes. It makes the perfect summer side dish! (gluten-free, vegetarian)
Have you all noticed “zoodles” popping up everywhere? Zoodles, or zucchini noodles, are a delicious way to get more veggies in your diet. The idea is to replace regular spaghetti noodles with zucchini by running zucchini through a spiralizing kitchen tool that makes noodles out of any sort of veggie, really. (I just happen to like zucchini the best, as do many people it seems.)
Then you can use whatever sauce or topper you would normally put on pasta onto your zoodles for a meal that is loaded with veggies and lean on refined carbs. I think it’s genius! I wish I had invented it myself. There are lots of spiralizers out there, too. From less expensive, hand models that fit easily into any drawer, to fancy ones that involve very little work. Kitchen Aid even has a stand mixer attachment now! (That’s definitely on my Christmas list.) This is the one that I have and I love it!
Until recently, I had never thought to use zoodles raw in a zucchini noodle salad. I didn’t think I liked raw zucchini. I always sautéed them for a few minutes before serving them with whatever I was making, but I went over to my parents’ house the other weekend, and my mom had the fantastic idea to make a raw zucchini noodle salad. Let me tell you, it was AMAZING! It was so fresh and filling, and easy to make. It is the perfect side dish to accompany any meal, especially when it’s hot out.
You could make this lovely zucchini noodle salad a full meal by adding grilled chicken or shrimp (or chickpeas or tofu for my vegetarian readers)! I make my own simple dressing for this, but any vinaigrette will do in a pinch.

Zucchini, Tomato, and Avocado Salad
A delicious, refreshing, and super-simple zucchini noodle, or “zoodle” summer salad made with avocado, feta and tomatoes. (gluten-free, vegetarian)
- Prep Time: 10 minutes
- Total Time: 10 minutes
- Yield: 6 cups 1x
- Category: salad, side dish
- 2 Zucchini, spiralized or julienned
- 1 pint grape tomatoes, halved
- 1–2 stalks green onion, chopped
- 1 avocado, peeled and diced
- 2 Tbsp crumbled feta cheese
For the Dressing:
- 2 Tbsp red wine vinegar
- 1 Tbsp olive oil
- 1 Tbsp water
- 1/2 tsp dried oregano
- 1/8 tsp garlic powder
- Pinch salt and black pepper
- Prepare all of your veggies: Spiralize zucchini, cut tomatoes, onions, and avocado.
- In a large salad bowl, combine zucchini, green onion, tomatoes, avocado, and feta.
- In a small bowl, whisk together ingredients for dressing. Pour over vegetables and gently toss to combine.
- Keep refrigerated until ready to serve.
