It's my favorite time of year for making delicious meals! Summer means easy, lazy dinners full of fresh produce.
To keep things as easy as possible in the summer months, I like to make meals that can be cooked entirely on the grill. It makes both cooking and cleans up super easy, so you spend more time relaxing and enjoying delicious food.
One of my favorite veggies to grill in the summer is yellow squash. It's delicious grilled with nothing but olive oil, salt, and pepper, but I like to dress it up a little with fresh herbs and goat cheese in this dish for something a little more special with minimal effort.
Grilled summer squash with goat cheese and oregano is a super flavorful side dish that goes beautifully with any meal that you're grilling this summer. It's savory and herby, slightly smoky-sweet thanks to grilled onions, with a touch of tang from creamy goat cheese. And the best part is it's so easy to make, especially if you're already standing at the grill for something else!

Ingredients
- 3 large yellow squash
- ½ small white onion
- 1 tbsp olive oil
- Coarse sea salt
- Freshly cracked black pepper
- 2 tbsp fresh oregano leaves
- ¼ cup crumbled goat cheese
Instructions
- Heat grill or grill pan to medium low heat.
- Slice squash into ½ inch thick rounds. Slice onion into ½ inch pieces. Place in a bowl and toss with olive oil. Season with salt and pepper to taste.
- Grill squash and onions until grill marks appear and vegetables are softened but not soggy, 3-5 minutes per side. Remove from heat.
- Place squash and onions on a serving platter. Top with oregano and crumbled goat cheese.
Notes
To make grilling even easier, place squash and onions in a vegetable basket on the grill.
