    It seems like this time of year, everyone has an abundance of zucchini ready to be used in all kinds of delicious dishes. I'm usually included in that. And I'm not one bit mad about it. I love summer zucchini!

    Not only does zucchini make delicious savory side dishes and dinners, but it's also great in sweet treats like zucchini bread and even brownies! (I love these by Alexis at Hummusapien.) Zucchini is just so versatile and easy to use.

    But just in case you still have too many zucchini and don't know what to do with them, I've found a way for you to add them into your breakfast! Because who couldn't use more vegetables, especially at breakfast?

    This chocolate chip zucchini bread baked oatmeal is a delicious way to get an extra serving of veggies that tastes like dessert, but is actually a healthy breakfast treat! Made with nutritious ingredients like whole grain oats, flaxseed, eggs, walnuts, and zucchini, this baked oatmeal will keep you full and energized all morning long!

    And let's talk about how convenient it is! I've been living off of quick and easy breakfasts lately, and this zucchini bread baked oatmeal has been one of my favorites this summer. It is easy to meal prep on a weekend to enjoy throughout the week. Just grab a little bit in the morning and heat in the microwave for about a minute for a delicious, nutritious warm breakfast that is ready when you are! Or enjoy cold for an even quicker meal.

    I love to add a drizzle of peanut butter on top of my bowl of zucchini bread baked oatmeal after I heat them up for extra deliciousness!

    You can customize this chocolate chip zucchini bread baked oatmeal to fit your dietary needs. Use dairy-free chocolate chips and nondairy milk for a dairy-free version, or use flax eggs instead of regular eggs in addition to dairy-free for a vegan version. You can sub coconut sugar for the brown sugar. Nut-free? Leave out the walnuts. This can totally be made your own!

    Ingredients

    Scale
    • 2 cups rolled oats
    • 2 tbsp ground flaxseed
    • 1 tsp ground cinnamon
    • ¼ cup light brown sugar
    • ¼ tsp salt
    • 2 large eggs*
    • 1 ½ cup milk of choice*
    • 1 tsp vanilla extract
    • 1 ½ cups grated zucchini (about 2 small zucchini)
    • ½ cup dark chocolate chips*
    • ½ c walnuts, chopped (optional)

    Instructions

    1. Heat oven to 375°F. Lightly spray an 8" baking dish with oil.
    2. In a large bowl, combine oats, flaxseed, cinnamon, brown sugar and salt.
    3. In a smaller bowl, whisk together eggs, milk and vanilla. Add to the dry ingredients and stir to combine. Stir in zucchini, chocolate chips, and walnuts if using.
    4. Pour mixture into prepared baking dish.
    5. Bake 25-30 minutes, or until set. Remove from the oven and allow to cool before cutting into squares or storing.
    6. Store covered in the refrigerator for up to 5 days.

    Notes

    *For dairy-free, use nondairy milk and dairy-free chocolate chips. Add flax eggs in plaace of regular eggs for vegan.
