Summer entertaining calls for easy but delicious snacks utilizing the best of summer produce. Anyone who knows me well knows that I'm a sucker for a sweet and savory combo, so any appetizer I'm serving is going to be filled with sweet summer fruit, savory cheese, and something just a little indulgent. A sweet and savory bruschetta like this peach bruschetta with burrata, prosciutto, honey, and a sprinkle of sea salt is my ideal summer app when friends come over for a little summer happy hour.
What Is Bruschetta (And How Do You Say It?)
First a little culinary lesson. Bruschetta (pronounced 'broo-SKET-uh') is an appetizer that consists of bread that is brushed with olive oil and toasted or grilled, then traditionally topped with a mixture of fresh tomato, basil, olive oil and garlic. However, it can be topped with anything, or not at all. I like to get creative with my toppings, like in this peach, prosciutto and burrata version.

How To Make Peach Bruschetta with Prosciutto and Burrata
- First make the toast by drizzling or brushing your favorite bread with olive oil. Then toast bread in the oven at 400°F or on the grill over medium heat until warm and golden.
- Pinch off pieces of burrata and spread on each piece of toast.
- Top each toast with a slice of prosciutto and a few peach slices. Then sprinkle with sea salt and drizzle with honey. Garnish with baby arugula or a bit of fresh basil.
Can Bruschetta Be Made In Advance?
I don't recommend making this peach bruschetta in advance, as the toast will get soggy and peaches will start to brown.
Recipe Variations
The great thing about bruschetta is that there are so many ways you can go with it! Change up the recipe to suit your taste and what you have on hand. A few suggestions:
- Switch out the burrata for creamy goat cheese, ricotta or sliced fresh mozzarella
- Leave off the prosciutto for a vegetarian version, or try cry crumbling crispy cooked bacon on top instead
- Try grilling the peaches for a little bit of a smoky flavor
- Drizzle with a balsamic reduction instead of honey

Ingredients
- 1 loaf of bread of choice (such as artisan bread, sourdough or French bread)
- olive oil, for drizzling bread
- 1 (8 oz) container burrata cheese
- 1 (4 oz) container prosciutto
- 3 large peaches, thinly sliced
- honey, for drizzling
- coarse Himalayan sea salt or flake salt
- fresh herbs such as arugula or basil (optional)
Instructions
- Heat oven, grill or grill pan to 400°F.
- Slice bread into ½" thick slices. Drizzle or brush olive oil onto bread. Toast or grill bread until crisp on the outside but still slightly soft.
- Tear burrata and spread on toasted bread. Place a small piece of prosciutto on top of each piece of toast. Top with sliced peaches.
- Drizzle bruschetta with honey and sprinkle with salt. Garnish with arugula or basil if using.
Notes
- Use French bread or a baguette for smaller bites of bruschetta, or a artisan bread or sourdough for larger pieces of bruschetta.
- If you can't find burrata, soft goat cheese, ricotta, or slices of fresh mozzarella work well.
- Leftover bruschetta can be stored in the refrigerator in an airtight container.
