You all know how much Mr. Table and I love our Saturday pancakes. This one is for the banana lovers, made with my homemade chai spice blend, and it's so perfect for fall.

Banana pancakes are some of my favorites, so I wanted to make another banana pancake recipe for the blog. I wanted this recipe to be super easy, full of delicious banana flavor, and a nutritious choice that you can feel good eating, even on weekdays. So like most of my recipes, these gluten-free banana chai blender pancakes are made with just a few simple ingredients: oats, banana, egg, baking soda and powder, spices, and yogurt.
These gluten-free banana chai blender pancakes make the most delicious breakfast treat on lazy weekend mornings with a cup of coffee or chai tea. The cozy chai spices are so perfect with the naturally sweet banana. AND they're super easy to whip up by blending everything in the blender!
What Makes These Banana Blender Pancakes Healthy?
Making pancakes with Greek yogurt gives them a little protein boost, which is great for pancakes and other breakfast foods that don't normally have a lot of protein. They also have no added sugar, leaning on bananas for natural sweetness that's complemented by warming fall spices.
Because these banana chai pancakes are made with oats and no flour, they are naturally gluten-free and whole-grain - perfect for providing filling fiber while being safe for people who can't tolerate gluten. I suggest using a very ripe banana for the most banana flavor and more natural sweetness.
How To make Banana Chai Blender Pancakes
- Add all of the ingredients to a high-powered blender (I love my Vitamix) and blend until smooth.
- Pour bater by ¼ cup onto a nonstick skillet or griddle. Cook until bubbles appear on the surface, then flip and continue cooking until done.
- Serve with yogurt, banana slices, maple syrup or honey!
Batch Cooking Banana Chai Blender Pancakes
If you'd like some leftover pancakes for weekday mornings that you can heat up in a pinch, double or triple the recipe and store your extra pancakes in the refrigerator or freezer. Heat refrigerated pancakes for 30-60 seconds, or heat frozen pancakes on half power (or defrost) for 1-2 minutes. Some people also like to heat frozen pancakes in the toaster!

Ingredients
- ¼ cup plain Greek yogurt
- 2 large eggs
- 1 medium very ripe banana
- ¾ cup rolled oats
- ½ tsp baking powder
- ¼ tsp baking soda
- 1 ½ tsp chai spice
- ⅛ tsp salt
- 1 tsp vanilla extract
Instructions
- Combine all ingredients in a blender and blend until smooth.
- Heat a griddle or nonstick skillet to 325°F or medium low heat. Lightly grease, if needed.
- Pour batter by ¼ cup onto hot griddle. Cook until bubbles appear on the surface, about 1 minute. Flip and cook until done, about 30-60 seconds more.
- Repeat with remaining batter.
- Top pancakes with more yogurt and banana slices, or drizzle lightly with nut butter of choice, pure maple syrup or honey.
Notes
- Add milk of choice to thin the batter, if necessary.
- Store extra pancakes in the refrigerator or freezer. Reheat for 30-60 seconds in the microwave or in the toaster.
