Gluten Free Banana Chai Blender Pancakes

Ingredients

  • 1/4 cup plain Greek yogurt
  • 2 large eggs
  • 1 medium very ripe banana
  • 3/4 cup rolled oats
  • 1/2 tsp baking powder
  • 1/4 tsp baking soda
  • 1 1/2 tsp chai spice
  • 1/8 tsp salt
  • 1 tsp vanilla extract

Instructions

  1. Combine all ingredients in a blender and blend until smooth.
  2. Heat a griddle or nonstick skillet to 325°F or medium low heat. Lightly grease, if needed.
  3. Pour batter by 1/4 cup onto hot griddle. Cook until bubbles appear on the surface, about 1 minute. Flip and cook until done, about 30-60 seconds more.
  4. Repeat with remaining batter.
  5. Top pancakes with more yogurt and banana slices, or drizzle lightly with nut butter of choice, pure maple syrup or honey.

Notes

  • Add milk of choice to thin the batter, if necessary.
  • Store extra pancakes in the refrigerator or freezer. Reheat for 30-60 seconds in the microwave or in the toaster.
