    Sweet potatoes are one of the most underrated foods IMO. And every time I buy them it's the same story: I get home, knowing I'll use them soon. Then I forget about them until they have sprouted in the back of my pantry, then I use them, love them, and swear I'll never let them go that long in my pantry again. Until next time.

    The solution? Bake (or boil) your sweet potatoes asap. Then you're forced to use them and remember just how tasty and versatile they are. Like in this gingerbread smoothie, which is perfect for using excess sweet potatoes!

    If you love gingerbread, you'll love this gingerbread flavored smoothie made with sweet potatoes! It's got all the delicious flavors of gingerbread -ginger, cinnamon, nutmeg and molasses - but in a healthy, nutritious, festive smoothie. This smoothie is perfect for using any leftover cooked sweet potatoes you may have, whether baked or boiled.

    How To Make a Gingerbread Sweet Potato Smoothie

    Exactly how you make any other smoothie. Put everything in the blender and push the button.

    Ingredient Substitutions

    • For a dairy-free variation, use our favorite dairy-free milk and yogurt.
    • I really love almond butter for this smoothie, but you can use any other nut butter you prefer. I think pecan butter would be delicious!
    • If you only have ground ginger powder, use ½ tsp.

    Ingredients

    Scale
    • 2 cups cooked, cooled sweet potatoes
    • 1 frozen banana
    • 1 cup milk of choice
    • ⅔ cup plain Greek yogurt
    • 2 tbsp almond butter
    • 1 tbsp molasses
    • 1 ½ tsp fresh grated ginger or ginger paste
    • 1 tsp ground cinnamon
    • ¼ tsp ground nutmeg
    • ¼ tsp ground cloves

    Instructions

    1. Add everything to a high powered blender and blend until smooth.
    2. Divide between glasses and enjoy!
