Easy Avocado Tomato Zucchini Salad with Feta

Zucchini noodles are delicious cooked and tossed with pesto or topped with your favorite spaghetti sauce. But have you tried them raw? Raw zucchini noodles (or zucchini in general) is DELICIOUS raw! It is super refreshing in the heat of the summer, when zucchini are at their peak, especially when tossed with a super simple dressing and flavorful add-ins. If you need a fresh, easy side dish for using your summer zucchini harvest, this salad is for you!

Why You'll Love This Zucchini Noodle Salad

This salad couldn't be easier to make with just a few simple ingredients that I always have on hand in the summer. It makes a healthy and delicious side dish for a variety of main dishes, and can be whipped up in a flash! The creamy avocado, sweet cherry tomatoes, green onion, garlic and feta add plenty of flavor and interest, while still letting the zucchini shine. Best of all, there's no cooking required, so your house can stay nice and cool in the summer heat!

The Ingredients

  • Raw zucchini - You can buy pre-made zucchini noodles for easier prep.
  • Cherry tomatoes
  • Avocado
  • Green onion
  • Feta cheese - Use unmarinated feta crumbles
  • Garlic
  • Olive oil - Use a good quality extra virgin olive oil.
  • Red wine vinegar
  • Oregano - I use dried, but you can use fresh oregano if you have it!
  • Salt & pepper

How To Make It

  1. Cut thin zucchini noodles using a spiralizer. Halve the tomatoes and chop the green onion and avocado.
  2. Add the zucchini noodles, tomatoes, green onion, avocado and feta to a large bowl.
  3. In a small bowl, whisk the olive oil, red wine vinegar, minced garlic, oregano, salt and pepper.
  4. Pour the dressing over the salad and gently toss to coat. Serve or refrigerate, covered.

Tip: The salad will develop more flavor as it sits in the refrigerator, so you can make it an hour or two in advance!

Do I Have To Use a Spiralizer?

If you don't have a spiralizer, no worries! You can either buy pre-made zucchini noodles in the produce section of your grocery store, or you can use what you have to cut the zucchini into a different shape. You just what the pieces to be relatively thin. You can use a vegetable peeler to make thin ribbons, or use a sharp knife to cut the zucchini into thin half-circles or matchsticks.

What To Serve With It

Pair this zucchini salad with your favorite grilled protein, like balsamic-marinated chicken, herby shrimp, or simple flank steak. You can also add some canned chickpeas or tuna for a quick lunch.

Ingredients

Scale
  • 2 medium zucchini, spiralized (see notes if you do not have a sprializer)
  • 1 pint grape tomatoes, halved
  • 2 green onions, chopped
  • 1 medium avocado, peeled and diced
  • ¼ cup feta cheese crumbles
  • 2 tbsp red wine vinegar
  • 2 tbsp olive oil
  • 1 clove garlic, minced
  • ½ tsp dried oregano
  • Pinch salt and black pepper

Instructions

  1. Prepare all of the veggies: Spiralize zucchini, halve tomatoes, and chop green onions and avocado.
  2. In a large salad bowl, combine zucchini, green onion, tomatoes, avocado, and feta.
  3. In a small bowl, whisk together red wine vinegar, olive oil, garlic, oregano, salt and pepper. Pour over salad and gently toss to combine.
  4. Keep refrigerated until ready to serve.

Notes

  • If you don't have a spiralizer, you can use a vegetable peeler to shave the zucchini into thin ribbons, or use a sharp knife to cut the zucchini into matchsticks or thin half-circles.
  • 2-3 teaspoon of chopped fresh oregano can be used in place of dried, if you have it.
  • Store leftovers in an airtight container in the refrigerator for up to 3 days.
