Do you ever make your own salad dressing at home? If not, it's time to start! Homemade salad dressing is so easy to make, and it's not filled with all the questionable ingredients that can sometimes be lurking in store-bought dressings.
One of my favorite dressings to make at home is this citrus shallot dressing. It's made with just a handful of simple ingredients: heart-healthy olive oil, fresh-squeezed orange juice, white wine vinegar, shallot, parsley, and dijon mustard.

This homemade dressing is so easy to make, it's much healthier than store-bought dressing, and it tastes absolutely delicious! Of course it;'s great on salads, but it also makes a wonderful marinade for chick, fish, vegetables and more. Once you make it, you won't go back to store-bought dressing!
How To Make Citrus Shallot Salad Dressing

Add all of your ingredients to a food processor or blender and blend until smooth. That's it! Pop it in a jar and store in the refrigerator.
Can This Dressing Be Frozen?
Yep! This recipe makes a good bit, but it's freezer friendly! I like to pour extra into ice cube molds to freeze, then pop them into a freezer safe bag so I can thaw out just a little as I need it.

How Should I Use Citrus Shallot Dressing?
- To dress salads, of course! Some of my favorites with this dressing are my Shaved Brussels Sprouts Salad, Watermelon, Feta and Arugula Grain Salad, Shredded Beet Kale Salad, or Arugula Spring Salad.

Ingredients
- Juice from 1 medium orange (about ⅓ cup)
- ¼ cup extra virgin olive oil
- 2 tbsp white wine vinegar
- 2 tbsp dijon mustard
- 1 small shallot, roughly chopped (about ¼ cup)
- 2 tbsp fresh parsley leaves
- ½ tsp sea salt
- ¼ tsp freshly cracked black pepper
Instructions
- Combine all ingredients in a food processor or blender and blend until smooth.
- Pour into a jar and use to dress your favorite salad or as a marinade.
- Store in the refrigerator in an airtight container.
Notes
- You can also use bottled orange juice instead of fresh.
- If you don't have parsley, about 2 teaspoon of thyme leaves would be a good substitute.

Made this recently and the balance seems off. The only real flavor was shallot and vinegar. Even added extra parsley and orange and they never came through. Would recommend just skipping the orange and starting with less vinegar, mustard, and shallot.

The only thing I don't like about ready-made salad dressing is the involvement of unnecessary ingredients. Just like you addressed in the post, they contain lots of sugar, salt, and oil. Thanks for sharing a wonderful option for homemade salad dressing. I'll give it a try!
