Simple Citrus Shallot Salad Dressing

This bright and flavorful citrus shallot salad dressing is easy to make at home with just a few simple ingredients and doubles as a delicious marinade. (dairy-free, nut-free, gluten-free)

Ingredients

  • Juice from 1 medium orange (about 1/3 cup)
  • 1/4 cup extra virgin olive oil
  • 2 tbsp white wine vinegar
  • 2 tbsp dijon mustard
  • 1 small shallot, roughly chopped (about 1/4 cup)
  • 2 tbsp fresh parsley leaves
  • 1/2 tsp sea salt
  • 1/4 tsp freshly cracked black pepper

Instructions

  1. Combine all ingredients in a food processor or blender and blend until smooth.
  2. Pour into a jar and use to dress your favorite salad or as a marinade.
  3. Store in the refrigerator in an airtight container.

Notes

  • You can also use bottled orange juice instead of fresh.
  • If you don't have parsley, about 2 tsp of thyme leaves would be a good substitute.
