    Especially during the peak spring season, there's no beating fresh artichokes (especially pan fried and served with a white wine sauce and burrata). But they're also a lot of work to prepare for relatively little reward, especially if you need a lot of hearts to use in a recipe. That's where canned artichoke hearts come in. Canned artichoke hearts offer a convenient way to get your artichoke fix, whether artichokes are out of season, or you're short on time and trying to get a delicious meal on the table. I always have a can on hand to throw into a salad or dip at a moment's notice. Frozen artichoke hearts are also a great option for most of these recipes, if that's what you prefer.

    Which canned artichokes to buy - in brine or marinated?

    For the most part, I prefer to stick to artichokes in brine - which is just a solution of water and salt. This allows for more control over flavor and oil. Though some recipes call for marinated artichokes - which are soaked in a oil and spices - as a simple shortcut.
