One of my go-to appetizers for entertaining is a veggie-filled dip. They're not too fussy, everyone loves them, and you can usually make them ahead of time. While a warm and gooey artichoke dip is a must in the winter, summer calls for a lighter, chilled dip full of fresh ingredients, like this whipped feta artichoke dip!
Of course, any good dip needs cheese, and a nice tangy cheese you can enjoy cold (instead of melted) like feta is just lovely in a cold dip. It adds just enough savory, salty flavor to keep things interesting, and goes perfectly with freshly steamed Ocean Mist Farms artichokes, garlic, lemon, and basil. It's like a summer flavor dream.
Like all of my dips, I lightened up this whipped feta artichoke dip with nonfat plain Greek yogurt. It's my secret weapon in the kitchen to add a rich creaminess to party food while also keeping it nice and light with a secret protein boost.

Ingredients
- 2 large Ocean Mist Farms artichokes
- 2 lemons, divided
- 2 cloves garlic, smashed
- 1 cup nonfat plain Greek yogurt
- ⅔ cup feta cheese, crumbled
- ¼ cup fresh basil leaves
- Pinch sea salt
- Pinch freshly cracked pepper
- Olive oil and additional feta, for serving (optional)
Instructions
- Prepare your artichokes for steaming by trimming sharp tips off of leaves and trimming stems. Cut 1 lemon in half and rub one half over artichokes. Place in a steamer basket.
- Squeeze the other half in the bottom of a large pot. And add enough water to cover the bottom, but not touch the steamer basket. Cover the pot and steam artichokes until tender 30-45 minutes. Cool artichokes in the fridge (I like to steam mine the day before).
- Once artichokes have cooled completely, cut them in half and remove chokes and hearts, reserving leaves for serving.
- Roughly chop artichoke hearts and add them to the bowl of a food processor with the innermost, very tender baby yellow leaves. Add juice of the remaining lemon, garlic, yogurt, feta, basil, salt and pepper. Pulse until combined, leaving just a little bit of texture.
- Scoop dip into a serving dish. Top with a drizzle of olive oil and additional feta cheese, if desired and serve with artichoke leaves, crostini, and crudités.
