Garlic Chicken White Pizza (Pizza Bianca)

This garlic chicken white pizza (or pizza bianca) with 3 cheeses and basil comes together quick enough to make on a weeknight, but is delicious enough for date night!

Anyone who knows me and my cooking style knows I love garlic. Anything and everything is better with more fresh garlic, including pizza! I turned my love for garlic into a delicious, easy-to-make pizza bianca with chicken, three kinds of cheese, and of course, plenty of garlic!

What Is Pizza Bianca?

Pizza bianca is "white pizza" in Italian. It refers to pizza without sauce. There can be additional toppings, such as veggies, herbs, and cheeses, just no tomato sauce (or white sauce, either!).

Why You'll Love This Pizza Bianca

This pizza is super flavorful, and SO easy to make! Especially if you are using a pre-made pizza dough (I use my whole wheat dough, but you can buy uncooked dough, too) and leftover chicken. Topped with ricotta, parmesan, and mozzarella, it's got all the cheesy goodness you love about pizza, plus a little heft and protein from the chicken. It all comes together in under 30 minutes, so it's great so both weeknight dinners and date nights.

How To Make Garlic Chicken White Pizza

  1. Place a pizza stone in the oven and crank the heat to 500°F.
  2. Stretch or roll your pizza dough into a thin circle on a piece of parchment or silicone baking mat, leaving the edges a little thicker.
  3. Mix the ricotta and minced garlic. Dollop over the pizza dough and use the back of a spoon to spread it just a little.
  4. Top with half of the grated parmesan and mozzarella, then the chicken.
  5. Add the remaining cheese and top with basil leaves.
  6. Carefully slide the parchment or pizza mat onto the pizza stone and bake 8-10 minutes, or until the cheese is bubbly.
  7. Carefully remove from the oven and slice.

Can This Pizza Be Grilled?

Yes! I love grilling my pizza because my oven takes forever to get super hot. You'll do the same thing as in the oven, just on the grill - heat the grill to 500°F with the stone on it, place the pizza (on parchment) on the stone, and grill with the lid closed 8-10 minutes.

Perfect Wine Pairings For White Pizza

This pizza lacks the acid that tomato sauce usually brings, so something crisp and light would pair well with it. I like:

  • A dry, citrusy white, such as Pinot Grigio or Sauvignon Blanc.
  • Dry sparkling wine (look for brut or extra brut to indicate dryness).
  • A light, crisp rosé.

Garlic Chicken White Pizza (Pizza Bianca)

This garlic chicken white pizza (or pizza bianca) with 3 cheeses and basil comes together quick enough to make on a weeknight, but is delicious enough for date night!

Ingredients

Scale
  • 1 unbaked pizza crust (I use my whole wheat pizza dough)
  • ⅓ cup part skim ricotta cheese
  • 5 cloves garlic, 2 minced and 3 thinly sliced
  • ½ cup cooked chicken, cut into bite-sized pieces
  • ¼ cup good quality parmesan cheese, grated
  • ¾ cup mozzarella cheese, grated or torn
  • 5-6 large fresh basil leaves

Instructions

  1. Heat oven to 500°F. Place a pizza stone in the cold oven to preheat.
  2. Finely mince 2 cloves of garlic. Thinly slice the other 3 cloves. Cut chicken into bite-sized pieces.
  3. Stretch or roll dough into a thin circle on a piece of parchment or silicone baking mat, leaving the edges a little thicker.
  4. Stir together ricotta and minced garlic. Dollop over crust and roughly spread out. It's pk if it doesn't cover the whole crust.
  5. Sprinkle half of the parmesan and mozzarella over ricotta. Evenly spread chicken and sliced garlic over the top, then sprinkle evenly with remaining parmesan and mozzarella. Top with basil leaves.
  6. Carefully remove pizza stone from the oven and slide the parchment or mat with pizza onto the stone. Bake 8-10 minutes.
  7. Remove from oven and cut into slices. 

Notes

  • You can use fresh whole milk mozzarella (the kind that comes in a ball) or part skim mozarella (that comes in a block or bag), either works!
  • If you don't have a pizza stone, use a sturdy baking sheet.
  • You can also grill this pizza using the same instructions, pizza stone and all!
  • If you don't have chicken already cooked, you can either bake a chicken breast in the oven at 375°F, covered, until cooked through, or you can pan-sear it in a skillet on the stove and then cover it until it is cooked through. Or grill it if you're going to be grilling the pizza!
