Easy 3 Ingredient Hummus Chicken

If you've got chicken and hummus, you've got dinner! This super easy, crispy on the outside, juicy on the inside, 3 ingredient hummus chicken is healthy, delicious, and ready in just 20 minutes! (dairy-free, gluten-free option)

If you're anything like me, you've always got a container of hummus laying in the fridge. While I love snacking on hummus (it’s combination of plant protein and fiber is perfect for staying power), I typically don't snack on it as much as I intended when I bought it, which means it usually gets used at dinnertime.

Luckily for me (and you if you also tend to always have it in your fridge), hummus is a super versatile ingredient, and it just happens to be the perfect way to effortlessly improve plain old chicken breasts.

Why This Hummus Chicken Is Genius

This hummus chicken recipe is one of those where the sum is definitely greater than the equal of its parts. Of course hummus is great on its own, but when slathered on chicken breasts, coated in crunchy bread crumbs (both of which tend to be rather boring) and pan-fried in a touch of olive oil, magic happens. The sort of dinner magic that you need to happen on a weeknight - a super quick dinner with minimal ingredients that is both tasty and healthy. One that really works with any kind of hummus you have or any kid of bread crumb (crushed up crackers from the bottom of the box? Go for it.) and that you can serve with anything. And one that will make the whole family happy.

The key here is (obviously) hummus, which acts as both a binder for the bread crumbs on the chicken - one which holds the coating on tightly so that you can easily pan fry it - and a flavoring agent. That's the kind of multitasking ingredient that makes pulling off dinner in under 30 minutes easy. Like, really easy.

How To Make Easy Hummus Chicken

Like I said, it's really easy.

  1. Butterfly a chicken breast into 2 pieces, ½-inch thick each. (Or just pound out 2 small breasts into even ½-inch thickness.)
  2. Use a spoon to coat the top of each chicken breast with hummus.
  3. Dredge the chicken in panko (or any other bread crumbs you prefer). 
  4. Repeat with the other side of the chicken.
  5. Cook the chicken in a touch of olive oil in an oven safe skillet on the stove for a couple minutes per side, then finish cooking the chicken in the oven in the same skillet.
  6. Pour yourself a glass of wine, because dinner is served!

Tips For Making The Best Hummus Chicken

  • Make sure your chicken breasts are even thickness, and about ½ thick. An even, relatively thin piece of chicken will ensure evenly cooked, juicy chicken with a shorter cooking time.
  • Either use a nonstick oven proof skillet (I love these ones from All-Clad) or a very well seasoned cast-iron skillet for minimal mess and easier flipping.
  • Once the chicken is in the pan, don't move it until it's ready to flip. This will reduce sticking.
  • I always like to use a meat thermometer to know when chicken is done with out over-cooking it. It is cooked through when the thickest part reaches 165°F in the center.
  • No panko? No problem. Use bread crumbs or make some out of crusty bread, crackers, or anything remotely bread crumb-ish. 
  • This might be a no-brainer, but make sure you actually like the flavor of hummus you use, or else you won't like the chicken that you make with it.

What To Serve With Hummus Chicken

Literally Anything. But here are some suggestions:

  • Simple steamed or roasted veggies (I like asparagus, brussels sprouts or broccolini) and your favorite cooked grain (like quinoa)
  • A Mediterranean-style side dish like couscous, Greek pasta salad, or tabbouleh like I did here
  • On top of a salad

Ingredients

Scale
  • 1 medium boneless, skinless chicken breast
  • ¼ cup hummus (I like roasted red pepper flavor)
  • ¼ cup plain panko bread crumbs (use gluten-free bread crumbs for gluten-free)
  • ½ tbsp olive oil

Instructions

  1. Heat oven to 375°F.
  2. Filet chicken breast into 2 pieces, ½" thick each. Alternately, you can pound 2 small chicken breasts into ½" thickness.
  3. Spread 1 tablespoon of hummus over one side of each piece of chicken. Coat with panko.
  4. Turn chicken over and spread other sides with hummus and coat with panko.
  5. Heat oil in a large nonstick oven-proof skillet or well-seasoned cast iron skillet on the stove over medium heat.  Once hot, place chicken in the skillet. Let cook, undisturbed, until underside is lightly golden, about 2 minutes.
  6. Use a spatula to carefully flip the chicken. Let it crisp for another 1-2 minutes before moving the skillet to the oven.
  7. Finish cooking chicken in the oven until cooked through, about 10 minutes.

Notes

  • Use gluten-free bread crumbs or your favorite gluten-free crackers crushed up to make this recipe gluten-free. Also check to make sure your hummus is gluten-free.

    This was amazing! Super simple ingredients & steps, but also really flavorful and moist. I followed the recipe exactly (panko and roasted red pepper hummus) and it will definitely be one of our go-to dinners from now on!
