    Grilled Peach Caprese

    A caprese salad is quite possibly one of my favorite summer foods. I probably say that about everything featuring summer produce, but caprese is definitely in the top 5. I love how the simplest ingredients are transformed into something so delicious is no time at all. While I love a traditional caprese salad, it's fun to switch things up by replacing tomatoes with grilled peaches in this grilled peach caprese salad.

    Why You'll Love This Grilled Peach Caprese Salad

    • It's so delicious! The natural sugars in fresh peaches caramelize on the grill, bringing out their sweetness even more. A hint of warmth and smoky flavor offer a delicious contrast to creamy, milky mozzarella cheese and punchy fresh basil. A drizzle of balsamic vinegar and sprinkle of sea salt finish it off for the perfect salad for summer nights.
    • It's so simple to make with just 4 ingredients! Grilling the peaches takes no time, and if your grill is already on for something else, this salad is a breeze to throw together for an appetizer or side dish.
    • It's a great use for an abundance of summer peaches or basil if you grow it in your garden.

    How To Make Grilled A Peach Caprese Salad

    This salad couldn't be easier:

    1. Slice peaches to a uniform thickness (about ½ inch) and slice mozzarella thinly (about ¼ inch). Cut mozzarella into half-moons.
    2. Lightly spray or brush the peaches with oil and grill on medium heat for about 2-4 minutes per side, flipping only once.
    3. Layer grilled peach slices, mozzarella pieces, and whole basil leaves on a serving platter. Drizzle with balsamic reduction and sprinkle with coarse sea salt.

    Tips For Grilling Peaches

    Grilling peaches is super easy, but you'll want to make sure you do it right to avoid a mushy mess that sticks to the grill.

    • Make sure your grill or grill pan is clean before using it.
    • Preheat the grill so that it's nice and hot when you add the peaches. You want a relatively high temperature (I use a medium setting) so that the outsides cook and get nicely caramelized but the insides don't get too soft.
    • Oil your peaches (not the grill) before placing them on the grill.
    • Once you place the peaches on the grill, don't move them until it's time to flip or remove them. Letting them cook undisturbed lets them get a nice caramelized crust that makes them release from the grill when it's time.

    What To Serve With Grilled Peach Caprese

    Our summer meal formula is simple: a grilled protein + a salad filled with all the best summer produce. This peach caprese goes well with any grilled protein you like, such as my bourbon glazed cedar plank salmon, spatchcock BBQ chicken, grilled pork chops, or a juicy steak! If you want to keep things vegetarian, whip up your favorite whole grain (like quinoa) or serve with some grilled slices of bread drizzled with olive oil or flatbreads.

    Grilled Peach Caprese Salad

    Ingredients

    Scale
    • 2 medium peaches
    • 4 oz fresh mozzarella
    • 10-12 fresh basil leaves
    • balsamic reduction
    • olive oil
    • coarse sea salt

    Instructions

    1. Preheat grill or grill pan to medium heat.
    2. Wash and slice peaches about ½ inch thick. Slice mozzarella ¼ inch thick and cut each piece in half to make half moon shapes.
    3. Brush or spray peach slices with olive oil. Place peaches on the grill and cook undisturbed until grill lines appear, about 2-4 minutes. Flip peaches and continue cooking until grill lines appear on the other side. Remove from the grill.
    4. Arrange the salad on a plate by alternating slices of peaches, mozzarella, and basil leaves. Drizzle with balsamic reduction and sprinkle with sea salt.

    Notes

    • Once you place the peaches on the grill, don't move them until you're ready to flip them. This will help them develop a crust so that they release form the grill easily.
    • If you'd like to make the balsamic reduction yourself, add about ¼ cup balsamic vinegar to a small saucepan and bring to a gentle boil. Simmer until reduced by half, about 15-20 minutes.

      This is such a cool way to use peaches! I go peach picking every year and always make pies, but those donuts and these skewers are definitely happening in the Byrd house this summer! Thanks for such a cool recipe!
