Lightly spray an 8″ baking dish with oil. In a large bowl, combine oats, flaxseed, cinnamon, brown sugar and salt. In a smaller bowl, whisk together eggs, milk and vanilla. Add to the dry ingredients and stir to combine. Stir in zucchini, chocolate chips, and walnuts if using. Pour mixture into prepared baking dish. Bake 25-30 minutes, or until set. Remove from the oven and allow to cool before cutting into squares or storing. Store covered in the refrigerator for up to 5 days. Notes
