Blue Cheese Mashed Potatoes with Caramelized Onions

If you're a potato lover, you'll swoon over these blue cheese mashed potatoes with caramelized onions! They're a serious upgrade from your basic mashed potato recipe and will make any meal more memorable.

Why You'll Love These Blue Cheese Mashed Potatoes

These dreamy mashed potatoes are light and fluffy with creamy, tangy blue cheese and savory caramelized onions folded in. Made with Greek yogurt for extra creaminess and horseradish for a sharp note of spice at the end, they're super flavorful and easy to make. Even thought they're lightened up, you'd never know! Obviously, they're perfect for using up that last bit of blue cheese at the end of a wedge that's been hanging out in your fridge for a moment.

Why Caramelized Onions?

Caramelized onions in these dreamy blue cheese mashed potatoes was actually not my idea. The original recipe did not have them. But a reader suggested it, I tried it, and I've never looked back! Subtly sweet caramelized onions tame down the tangy punch of blue cheese ever so slightly. They're a match made in heaven!

How To Make Blue Cheese Mashed Potatoes with Caramelized Onions

  1. Peel and cube the potatoes. Add to a pot with garlic, broth, salt and cover with water. Bring to a boil and simmer until potatoes are tender.
  2. Meanwhile, thinly slice half an onion and cook in a touch of oil on low heat until golden and soft.
  3. Drain the potatoes, reserving 1 cup of cooking liquid. Add potatoes to the bowl of a stand mixer (or use a hand mixer or potato masher).
  4. Mash the potatoes, then whip in butter, yogurt, blue cheese, horseradish and pepper. Add the reserved cooking liquid, a little at a time, as needed to reach your desired consistency.
  5. Stir in caramelized onions and serve.

Tips and Recipe Variations

  • This recipe originally did not have caramelized onions. Leave them out if you prefer. 
  • You can use sour cream in place of yogurt if you like. 
  • My husband makes fun of me for under-salting potatoes regularly. Taste and add more salt as needed. 
  • Please don't use a hand mixer in your cookware. You'll ruin it, and that hurts my feelings.
  • Store leftovers in an airtight container in the refrigerator up to 3 days.

Ingredients

Scale
  • 4 cups quartered Yukon gold potatoes, peeled and cubed
  • 2 cloves garlic
  • 1 cup chicken or vegetable stock
  • Water
  • ½ tsp kosher salt
  • ¼ cup plain Greek yogurt
  • 1 tbsp butter
  • ⅓ cup crumbled blue cheese
  • 2 tsp prepared horseradish
  • ½ tsp freshly cracked black pepper
  • 1 tsp oil
  • ½ medium onion, sliced ¼ inch thick

Instructions

  1. Add quartered potatoes and garlic to a medium saucepan. Add stock, salt and enough water to cover tops of potatoes.
  2. Bring to a boil and simmer over medium-low heat for 10-15 minutes or until tender. Drain potatoes, reserving 1 cup of the liquid.
  3. Meanwhile, add oil to a small skillet and heat over medium-low heat. Add onions and cook, stirring, over low heat until onions are soft and golden. 
  4. Add potatoes to the bowl of a stand mixer (or you can use a large bowl with a hand mixer or potato masher). Mash potatoes until broken down. 
  5. Add yogurt, butter, gorgonzola, horseradish and pepper and whip until smooth and creamy, adding reserved cooking liquid a little at a time as needed, until you reach the consistency you prefer.
  6. Stir in the caramelized onions.

Notes

  • This recipe originally did not have caramelized onions. Leave them out if you prefer.

    Made this tonight as a side for steak au poivre. The flavor matched up perfect with the steak! I added a little more gorgonzola and a hair of heavy cream, but that's just my personal preference. Overall, an easy and delicious recipe!

    This is a wonderful version of a classic dish. I made a small test batch last week and it really was devine!! Question: how well will this hold up if making the night before? I don’t know since last time we ate every last morsel... 😋

      I think caramelized onions would be great here! I can't say for sure on amounts since I've never tried it. Maybe 1/2 to 1 onion? This makes about 6 servings.
