Strawberry Baked Oatmeal

Celebrate strawberry season with this healthy no added sugar strawberry baked oatmeal made with simple ingredients and bursting with strawberries! It's a delicious make-ahead breakfast for busy summer mornings that can be enjoyed hot or cold. (gluten-free, nut-free)

Who else is excited about strawberry season?! I just love this time of year for all of the fresh produce. Sweet, juicy strawberries have always been a favorite of mine, and they tend to make an appearance in all of my food during the summer months.

You all know how much I love oatmeal, so I don’t stop eating it in the summer just because it's hot out. And it is HOT here in Texas. We're already in 105+ temperatures! So I'm a little more strategic with heating up the kitchen in the summer. That means instead of firing up the stove every morning, I like to prep my oatmeal ahead of time in the form of baked oatmeal.

Why You'll Love This Healthy Strawberry Baked Oatmeal

With this delicious strawberry baked oatmeal, you can cook once and have nutritious breakfasts all week long. All you have to do is pop a square in the microwave in the mornings and you're good to go! Or you can eat a piece cold straight from the refrigerator on days that it's REALLY hot out. What could be easier?

This oatmeal is a delicious and healthy way to start the day with no added sugar, plenty of heart healthy and filling fiber, and extra protein from creamy Greek yogurt. (It's also great for nursing moms and babies!) It's a great way to use those sweet summer strawberries.

How To Make Strawberry Baked Oatmeal

  1. In a large bowl, stir together oats, flaxseed and salt.
  2. In a separate bowl, whisk together the yogurt, milk, eggs and vanilla. Stir into the oat mixture. Gently stir in chopped strawberries.
  3. Pour oatmeal into a lightly greased baking dish. Top evenly with sliced strawberries.
  4. Bake 25-30 minutes or until set. Remove from the oven and let cool before cutting into squares.
  5. Top oatmeal with more yogurt before eating.

How To Store and Reheat Baked Oatmeal

Baked oatmeal can be stored in the refrigerator in an airtight container for up to 5 days. To reheat it, simply place a piece on a microwave safe plate and microwave for 60-90 seconds. Top with a scoop of yogurt and enjoy!

To freeze, cut oatmeal into individual pieces and freeze in a freezer-safe bag or container. Remove pieces as needed and thaw overnight in the refrigerator.

Ingredients

Scale
  • 2 cups rolled oats
  • 2 tbsp ground flaxseed
  • ¼ tsp sea salt
  • ½ cup plain Greek yogurt, plus more for topping
  • 1 ¼ cups milk of choice
  • 2 large eggs
  • 2 tsp vanilla
  • 1 ½ cups chopped fresh strawberries
  • Additional sliced strawberries, for topping

Instructions

  1. Heat oven to 375°F. Lightly oil an 8-inch baking dish with oil. Set aside.
  2. In a large bowl, stir together oats, flaxseed and salt.
  3. In a separate bowl, whisk together yogurt, milk, eggs and vanilla. Stir into oat mixture. Gently stir in chopped strawberries.
  4. Pour oatmeal into prepared baking dish. Top evenly with sliced strawberries.
  5. Bake 25-30 minutes or until set. Remove from oven and let cool before cutting into squares.
  6. Top oatmeal with more yogurt before eating.

Notes

  • Store baked oatmeal in an airtight container in the refrigerator for up to 5 days.
  • Oatmeal can be frozen in individual pieces in an airtight container or freezer safe bag.
  • To reheat, simply place one piece in a microwave-safe bowl or plate and microwave 60-90 seconds.
  • If you prefer your oatmeal a little sweeter, you can use vanilla Greek yogurt or add 2-4 tablespoon maple syrup to the recipe.
  • For baby led weaning, leave out the salt.

      Yes you can! You may have to bake for a couple minutes longer.
