Smoked Goat Cheese Dip with Crispy Garlic

This hot goat cheese dip with crispy garlic is made on the smoker for a subtle smoked flavor and ease of entertaining when your smoker is already fired up! No smoker? Make it in the oven just as easily. (gluten-free, vegetarian)

Everyone knows that goat cheese is delicious. What's not to love? It's tangy, creamy, and goes beautifully with a variety of flavors. But have you ever had smoked goat cheese? I'm talking hot, melty goat cheese cooked on the smoker with crispy garlic pieces on top. If not, what are you waiting for?

Smoked goat cheese dip is perfect for entertaining, especially when you already have the smoker going. With just 3 simple ingredients, it's easy to throw together, and it's absolutely delicious! Olive oil infused with crispy garlic sits atop creamy, tangy goat cheese that's just barely kissed with a subtle hint of smoke. Great with a fresh baguette, crispy crostini, or you favorite crackers, it's sure to be a hit at tailgates and summer cookouts.

How To Make Smoked Goat Cheese Dip

  1. Slice a few garlic cloves paper-thin and add the to a small (6 inch) skillet with about 2 tablespoons of olive oil. No need to be super precise.
  2. Place in on a smoker heated to roughly 350°F and let the garlic get crispy and golden, about 5-10 minutes.
  3. Set the garlic and oil aside in a bowl and press the goat cheese into the bottom of the skillet.
  4. Place the skillet back on the smoker until the goat cheese is melted and hot, about 10 more minutes.
  5. Remove the skillet from the smoker and top with the reserved garlic and oil, then serve!

Can It Be Made Without a Smoker?

Yes! This dip is just as delicious made in the oven. Just set it to 350°F and follow the recipe as written.

Other Recipe Variations

  • If you're feeding a bigger crowd (or only have a larger skillet), you can easily double the recipe for an 8 to 10 inch skillet.
  • You can also use a small foil pan or ceramic dish to smoke or bake the dip.
  • Feel free to add other flavors with infused oils, pepper, herbs, etc.

Ingredients

Scale
  • 3 large cloves garlic
  • 2 tbsp olive oil
  • 4 oz plain goat cheese

Instructions

  1. Heat smoker to roughly 350°F.
  2. Peel and thinly slice garlic cloves from top to bottom. 
  3. Add garlic and oil to a small (6 inch) cast iron skillet. Place on the smoker and cook until garlic is crisp and golden, about 5-10 minutes. Pour garlic and oil in to a bowl and set aside.
  4. Press goat cheese into the bottom of the skillet. Place back on the smoker and cook until goat cheese is hot and melted, about 10 minutes.
  5. Remove from the smoker and top with reserved garlic and oil. 
  6. Serve with crackers, chips, or crostini.

Notes

  • This recipe is easily doubled for a larger skillet.
  • You can make this dip in the oven set to 350°F.
  • You can also use a small foil pan or ceramic dish to smoke or bake the dip.
  • Feel free to add other flavors with infused oils, pepper, herbs, etc.
