You guys, I have been on a roll with my grilling skills lately! I just can't help but make all of my dinners outside right now since the weather is finally starting to cool down just a bit. And since a meal on the grill means less mess in my kitchen, I am all for cooking a healthy dinner outside!

Why You'll Love Mediterranean Grilled Chicken Kabobs

These Mediterranean Chicken and Artichoke Kebabs are full of flavor thanks to a delicious marinade and healthy Mediterranean vegetables, including fresh artichokes. Protein and fiber make this a filling and nutritious dinner. If you want to add a starchy component, serve with cooked quinoa or throw some baby potatoes on the grill alongside the kebabs. It makes an easy and delicious weeknight meal that the whole family will love.

These yummy kebabs would also make great game-day food for the upcoming football season! People love food on sticks. And since clean up is so easy, you can relax and enjoy the game too while eating a delicious, healthy meal!

How To Make Mediterranean Grilled Chicken Kabobs

  1. Cut the chicken into cubes and place in a container with the marinade.
  2. Chop the onion and bell pepper. Thread the veggies onto skewers with the chicken.
  3. Grill on medium-low heat, turning so that all sides get cooked evenly. 
  4. Remove from the grill and enjoy!

Can I use fresh artichokes?

Yes! To use fresh artichokes, you'll clean them and cut them into quarters, then steam the quarters for 15-20 minutes before adding them to the kabobs. I like to steam them on the grill for easier cleanup. Just make a foil packet by folding the artichokes inside the foil and grill on medium heat until soft. 

What To Serve with Mediterranean Grilled Chicken Kabobs

I always like something to dip, like hummus or tzatziki sauce. You can also serve with cucumbers, olives, a whole grain like farro, couscous, or quinoa, or grilled pita bread. My Greek Orzo Pasta Salad is also a favorite!

Ingredients

Scale
  • 2 boneless skinless chicken breasts
  • 3-4 cloves garlic, minced
  • 2 tsp dried oregano
  • ¼ tsp sea salt
  • ½ tsp freshly cracked black pepper
  • Juice of 1 lemon
  • 3 tbsp cup olive oil
  • 3 tbsp cup red wine vinegar
  • Juice of 1 lemon
  • ½ (14 oz) can artichoke quarters, drained
  • ½ pint cherry tomatoes
  • 1 red bell pepper
  • 1 red onion
  • Olive oil

Instructions

  1. Cut chicken breasts into 1-inch cubes. Place in a non-reactive container with garlic, oregano, salt, pepper, lemon, olive oil and vinegar. Stir to coat and marinate, refrigerated, 30 minutes to an hour. If using wooden skewers, soak them in water while chicken marinates.
  2. Cut bell pepper and onion into 1-inch pieces.
  3. Thread chicken, tomatoes, peppers, onions and artichokes onto skewers. Drizzle with olive oil.
  4. Heat grill to high heat, then turn down to medium-low.
  5. Grill skewers, turning every few minutes until chicken is cooked though. It should reach an internal temperature of 165°F. Remove from grill and serve immediately.

Notes

  • If you would rather use fresh artichokes, you can steam them before threading them onto the skewers. Just clean them and cut the hearts into quarters in a bowl of ice water. To steam them on the grill, place artichokes on a large piece of foil and fold over sides to make a closed foil packet. Cook artichokes on the grill for 15-20 minutes or until soft. Remove from heat and foil, and continue with the recipe.
