How to Make Honey Grilled Pork Chops with Grilled Plums
This recipe really is very simple.
- While the grill heats up, rub some thick, bone-in pork chops with honey and olive oil. Give them a generous seasoning of salt and pepper on both sides. Slice the plums in half and oil them.
- Put everything on the grill! The pork chops should cook on medium high heat for about 5 minutes per side. Grill the plums, cut side down only, for 5-10 minutes, or until they are soft but not mushy.
- While the pork chops are cooking, toss arugula with lemon juice and olive oil and divide it onto plates.
- Top the arugula with finished pork chops, sliced grilled plums, a sprinkle of fresh oregano, and big beautiful strips of shaved parmesan.
Pro Tips for Making the Best Grilled Pork Chops and Plums
- Don't be afraid to season the pork chops heavily with salt and pepper. This will give you a nice flavor, help the honey stick to the chops, and form a little crust.
- For the juiciest pork chops, grill on medium-high heat (about 450°F) for a few minutes per side. When they are done, a thermometer inserted into the center of the thickest part of the chop should read 145°F.
- Grill the plums halved, then slice into quarters after they are grilled. This will make them easier to keep up with on the grill.
- Let the pork rest for a bit while you are slicing the plums to lock all the juices in.
- Use really good parmesan and olive oil. I like the organic olive oil and parmesan in a block from Costco.
Ingredient Substitutions
- You can leave out the parmesan to make this dish dairy-free.
- Don't have fresh oregano? Try fresh thyme, rosemary or basil.
- Try this dish with other stone fruit, such as apricots or peaches.
