Ingredients

Scale
  • 3 medium to large yellow squash
  • 1/2 medium white onion
  • 1 tbsp olive oil
  • Coarse sea salt
  • Freshly cracked black pepper
  • 2 tbsp fresh oregano leaves
  • 1/4 cup crumbled goat cheese

Instructions

  1. Heat grill or grill pan to medium low heat.
  2. Slice squash crosswise into 1/2 inch thick rounds. Slice onion from root to tip into 1/2 inch pieces, leaving root end intact to keep onion slices together.
  3. Place squash and onions in a bowl and gently toss with olive oil. Season with salt and pepper to taste.
  4. Grill squash and onions until grill marks appear and vegetables are softened but not soggy, 3-5 minutes per side. Remove from heat.
  5. Place squash and onions on a serving platter. Top with oregano and crumbled goat cheese.

Notes

  • To make grilling even easier, you can grill the squash and onions in a vegetable basket or on the grill.
