Leftover sweet potatoes? Blend them into a nutritious and delicious gingerbread sweet potato smoothie that's both festive and healthy. (gluten-free)
Sweet potatoes are one of the most underrated foods IMO. And every time I buy them it's the same story: I get home, knowing I'll use them soon. Then I forget about them until they have sprouted in the back of my pantry, then I use them, love them, and swear I'll never let them go that long in my pantry again. Until next time.
The solution? Bake (or boil) your sweet potatoes asap. Then you're forced to use them and remember just how tasty and versatile they are. Like in this gingerbread smoothie, which is perfect for using excess sweet potatoes!
