Easy Skillet Pork Chops with Balsamic Glaze

I feel like people forget about pork chops. Or don't know how to cook them. If you are in one of those two categories, this is the perfect recipe for you! Skillet pork chops with balsamic glaze are super simple to make and will give you more confidence with cooking pork chops at home.

Why I Love Pork Chops

Pork gets a bad rep (hello bacon and sausage!) but it's really a great source of protein with several lean cuts. It's also usually pretty affordable. Center cut pork chops are one of my favorite lean meats that are versatile and easy to prepare quickly on busy weeknights! Mr. Table loves them too, so it's a win for both of us. To keep them on the healthy side, choose chops that read 'center cut' on the package and with less marbling on the inside. I like to buy thicker cut ones (about 1 inch).

Why You'll Love These Skillet Pork Chops

What makes this dish so amazing is that not only is it super tasty, but it's so quick and easy! You only need 4 ingredients, about 15 minutes and one dish - a cast iron skillet! You finish the 3 ingredient sauce right there in the skillet, and the result is deliciously tender pork with a nice crust and a luxurious, flavorful balsamic drizzle. It's a beautiful and impressive dish that takes no time or effort. It's perfect for a busy weeknight when you want something tasty but don't want to work too hard.

How To Make The Easiest Skillet Pork Chops with Balsamic Glaze

  1. Get the oven super hot (550°F on broil, or as high as your broiler will go). Heat the skillet on high heat on the stove.
  2. Season pork chops generally on both sides with salt and pepper. Sear in the skillet about 30 seconds on each side. 
  3. Place pork chops in the oven in the skillet and broil 1-2 minutes per side, then remove the pork chops to a plate and cover.
  4. Place the skillet back on the stove, add the balsamic vinegar, garlic and rosemary and simmer until the vinegar is thickened and reduced by about half. 
  5. Serve pork chops drizzled with balsamic reduction.

Tips For Making The Best Skillet Pork Chops

The secret to cooking your pork chops perfectly is the heat. You've got to get your skillet screaming hot to sear the meat, and then continue to cook it under the broiler for a chop that is nice and seared on the outside, yet juicy and tender on the inside. If you're unsure about whether the pork is cooked through, use a meat thermometer to check the temperature. They're done when the internal temperature reaches 145°F. Don't forget to rest it for a few minutes to lock in those juices!

Ingredients

Scale
  • 4 small center cut pork chops
  • Olive oil
  • Coarse sea salt
  • Freshly cracked black pepper
  • 2 cloves garlic, smashed
  • 1 sprig fresh rosemary
  • ¼ cup balsamic vinegar

Instructions

  1. Season both sides of pork chops liberally with salt and pepper. Turn on the broiler of the oven to 550°F.
  2. Heat a cast iron skillet until hot over high heat on the stovetop. Add olive oil to coat the pan.
  3. Sear pork chops for about 30 seconds on each side.
  4. Move skillet under the broiler and cook an additional 1-2 minutes per side depending on thickness (cook thicker chops longer).
  5. Remove from oven and let chops rest on a plate covered, about 10 minutes.
  6. Move skillet back to stovetop over medium heat. Add garlic and rosemary and deglaze pan with balsamic vinegar, scraping up the browned bits. Let cook until the vinegar has reduced into a glaze. Discard garlic and rosemary.
  7. Plate each pork chop and drizzle with balsamic glaze.

    Looks great! My husband misses the fact that he can't make pork at home since we keep a kosher home. But I bet this recipe would be just as delish w a lean beef tenderloin! Plus I can never pass up grilled stone fruit!
