How To Make It
- Add the sugar, water and lavender to a small saucepan and bring to a simmer over medium low heat. Stir to make sure the sugar is dissolved.
- Turn off the heat and let the mixture seep for 20-30 minutes.
- Strain out the lavender and pour the syrup into a sealable glass container. Store it in the refrigerator.
What Is The Best Sweetener To Use For Simple Syrup?
Traditional simple syrups are made with equal parts granulated sugar and water. You can also use:
- Pure cane sugar
- Raw sugar (such as Sugar In The Raw)
- Honey (which is delicious with lavender). Since honey is more sweet than sugar, you'll need about 2 teaspoons of honey per tablespoon of sugar. In this case, 2 tablespoon + 2 teaspoon honey in place of the ¼ cup of sugar.
I've tried making simple syrup with sugar substitutes with varying degrees of success. The problem I typically run into is it tends to precipitate within a few days of storing it in the refrigerator. Because substitutes vary on measurements, the amount you'd need will vary based on the type of substitute.
