Quick, you’re at your favorite Mexican restaurant and your server asks if you want to start with any queso or guacamole. What’s your automatic response? (I know you have one because they ask every time.) If you said guacamole, this post is for you. If you didn’t, maybe you should rethink your life choices.
When my husband and I go to eat Mexican food, we MUST have the guacamole. Tacos and fajitas (okay, and 3 baskets of chips) are just not the same without the smooth, creamy, green goodness that is guacamole! Whenever we make Tex-Mex at home (which is quite often) we always make guac, too.
The great thing about guacamole, besides being super delicious, is that it’s SO easy to make. All you do is mash up some avocados, add a little onion and tomato, and throw some salt and lime in there (someone get the tequila!) and you’ve got a bowl of the best stuff on Earth. And it’s super easy to customize. Sometimes I’m extra lazy and just do avocado, lime, and salt. Or if I’m feeling ambitious, I add cilantro. Some people like jalapeño in their guacamole, which is fine if you want to add it, I’m just a baby when it comes to spice.
Another guacamole bonus – it’s a much healthier dip than queso. Thanks to the avocado base, guacamole packs in the fiber and healthy fats, plus tons of vitamins and minerals, like potassium and folate! You can’t say that about queso, unfortunately.

This easy guacamole has just a few simple ingredients and is the perfect healthy dip to accompany any Tex-Mex dish! (gluten-free, dairy-free, nut-free, vegan)

- 1 large ripe avocado
- Juice of 1/2 lime
- 2 tbsp diced red onion
- 2 tbsp finely diced tomato
- Pinch salt
- Optional extras: pinch garlic powder, freshly cracked black pepper, chopped fresh cilantro, or diced fresh jalapeño
- Half the avocado and remove the seed. Use a spoon to scoop the flesh out into a bowl. Squeeze lime juice onto avocado. Mash avocado with a fork or potato masher.
- Gently stir in onion, tomato, salt, and any other ingredients you wish to add. Serve immediately or press plastic wrap onto surface and place in the refrigerator until ready to serve, up to 4 hours.
