How To Make Miso Caramel Apple Waffles
Make the Waffles
- Whisk together the dry ingredients.
- Add the wet ingredients and whisk until just combined.
- Stir in the grated apple.
- Cook in a waffle iron to your desired crispness!
Make the Caramel Apple Topping
- Add diced apples and water to a small saucepan. Cover and simmer until apples are soft.
- Stir in caramel and heat through.
- Spoon on top of waffles and enjoy!
Tips and Ingredient Substitutions
- If you don't have buttermilk, you can make 'soured milk' by adding 1 tablespoon white vinegar to a measuring cup, then adding enough milk to reach the 1 ¼ cup line. Stir and let sit for a few minutes before using.
- If you don't have caramel, you can either make homemade caramel sauce, or make a quick substitute for the topping. Ingredients
For the Waffles:
- 1 cup white whole wheat flour
- 1 tbsp cornstarch
- 1 ½ tsp baking powder
- ½ tsp baking soda
- ¼ tsp salt
- 1 tsp ground cinnamon
- 1 large egg
- 1 tbsp butter, melted
- 1 ¼ cups buttermilk
- 1 medium apple, any variety, grated
For Caramel Apple Topping:
- 1 medium apple, any variety, diced
- 2 tbsp water
- ¼ cup miso caramel (or any caramel sauce)
- Pinch salt (if your caramel is not salted)
Instructions
- In a large bowl, whisk flour, cornstarch, baking powder, baking soda, salt and cinnamon.
- Add egg, butter and buttermilk. Stir until just combined.
- Stir in grated apple.
- Heat waffle iron and spray or brush with oil, if needed. Scoop about ¾ cup batter into waffle iron and cook according to manufacturer's instructions.
- Repeat with remaining batter.
- Meanwhile, make caramel apple topping. In a small saucepan, heat diced apple and water, covered, over low heat, stirring occasionally, until apples are softened, about 10 minutes. Stir in caramel sauce and salt (if using) and continue cooking until just heated through.
- Top waffles with apple topping.
