Every October, Breast Cancer Awareness Month serves as a reminder not only to support breast cancer research and those who are currently battling or have battled cancer but to also be vigilant about our own health.

If you've been following along on my blog for a while, you know that I have the BRCA1 gene mutation, inherited from my mom, who also has the mutation and is a breast cancer survivor. So the topic of breast cancer awareness and prevention is an important one to me. Since I have such a high risk of breast cancer, regular frequent screenings are part of my breast health strategy, but even if you don't have a genetic predisposition to breast cancer, it's important to stay on top of your health to help prevent cancer.

While cancer is not always preventable, there are lifestyle factors that can help reduce your risk. These include getting in plenty of physical activity (I encourage you to find an activity you love, not just being a slave to the gym), not smoking, and consuming a healthy, balanced diet. In my opinion, one of the easiest modifiable risk factors for preventing breast cancer is making sure you include plenty of nutritious foods in your diet.

If you need a refresher, that means eating lots of plant foods (fruits, vegetables, nuts, whole grains, and beans), reducing processed meat products, and limiting alcohol (to one drink per day for women or two drinks per day for men).

This month, Chiquita (yes, the bananas!) has teamed up with the American Cancer Society for their Pink Sticker program to bring you healthy recipes that align with the American Cancer Society’s nutrition guidelines, and to help raise awareness and encourage action from millions of consumers in the fight against breast cancer.

One of my favorite recipes is this Banana Coconut Breakfast Pudding, which meets the American Cancer Society’s nutrition guidelines! It's a creamy sweet treat that is so yummy for breakfast. It’s quick enough that you can whip it up in the morning, or make it ahead the night before if you prefer.

The original recipe calls for coconut Greek yogurt, but for a lower fat option, you can use non-fat or low-fat yogurt.

Look for the Pink Sticker on Chiquita bananas to serve as your reminder to donate, sign up for a walk, or get your regular screening! Then pick up a bunch and make this banana coconut breakfast pudding for a healthy breakfast treat or snack!

Ingredients

Scale
  • 2 Chiquita bananas
  • 4 tbsp coconut flour
  • 4 tbsp coconut Greek yogurt*
  • 1 tbsp pecans, chopped
  • 1 tbsp coconut flakes

Instructions

  1. For the pudding layer, mash one ripe banana and mix with the coconut flour until smooth**. Divide mixture into the bottom of 2 glasses.
  2. Slice second banana.
  3. Top coconut pudding layers with 2 tablespoon yogurt and half a sliced banana each.
  4. Sprinkle with chopped pecans and coconut flakes. Serve immediately or refrigerate until ready to serve.

Notes

*For a no added sugar version, use plain Greek yogurt.

**Add milk as needed to get a smooth consistency.
