Ingredients

  • 2 Chiquita bananas
  • 4 tbsp coconut flour
  • 4 tbsp coconut Greek yogurt*
  • 1 tbsp pecans, chopped
  • 1 tbsp coconut flakes

Instructions

  1. For the pudding layer, mash one ripe banana and mix with the coconut flour until smooth**. Divide mixture into the bottom of 2 glasses.
  2. Slice second banana.
  3. Top coconut pudding layers with 2 tbsp yogurt and half a sliced banana each.
  4. Sprinkle with chopped pecans and coconut flakes. Serve immediately or refrigerate until ready to serve.

Notes

*For a no added sugar version, use plain Greek yogurt.

**Add milk as needed to get a smooth consistency.
