Are you dreaming of summer days and the warm sunshine? I sure am! While I can't transport you to a tropical vacation, I do have just the smoothie to bring the tropical vibes to you!

Why You'll Love This Blueberry Mojito Smoothie

This delicious smoothie has got all the refreshing flavors of a frozen blueberry mojito that will whisk you away to a beach somewhere, even if only for a little while. It's plant based and nutritionally balanced with healthy fat, fiber, and antioxidants. While it may not be peak berry season, frozen blueberries are available year-round and have all the delicious blueberry flavor you crave and all the nutrients of freshly-picked blueberries, while also making your smoothie extra thick and frosty.

The Ingredients

  • Frozen blueberries. I like wild blueberries for the best flavor!
  • Lime
  • Fresh mint
  • Milk. For a vegan smoothie, use your favorite non-dairy milk. Of course, you can use regular milk, too! For even more tropical vibes, try coconut milk.
  • Avocado. Perfect for adding creaminess and filling healthy fat.

Tip: For more protein, add a scoop of your favorite protein powder (I like unflavored) or use soy milk or real dairy milk.

How To Make It

Add all of the ingredients to a high speed blender (I love my Vitamix!) and blend until smooth.

Ingredients

Scale
  • 1 cup frozen blueberries
  • ½ small avocado, skin and seed removed
  • Juice of 1 lime
  • Small handful fresh mint
  • ¾ cup almond milk (or any milk of choice)

Instructions

  1. Place all ingredients in a high powered speed blender. Blend until smooth.
  2. Pour into a glass and enjoy!

Notes

  • Feel free to add a scoop of your favorite protein powder for a protein boost. Real dairy milk or soymilk will also be higher in protein than other non-dairy milks.
  • For even more tropical vibes, try using coconut milk!
