Cream cheese never enters the filling of this fall cheesecake. Two cups of raw cashews soak overnight, then get blended with coconut milk, coconut oil, maple syrup, and vanilla to create the thick center under its apple topping.

Almonds and Dates Form the Crust

Instead of moving into an oven, the cheesecake goes into the freezer for at least four to six hours. Coconut oil firms as it chills, helping the cashew layer set enough to slice.
