Peach Bellini Pops with Prosecco

Peach bellini popsicles with prosecco are the most refreshing way to use your summer peaches! Try these delicious, easy-to-make popsicles this weekend for a fun adult treat! (mocktail option included)

What's better than a popsicle on a hot day? How about a refreshing cocktail?

Better yet, how about a cocktail popsicle?!

I'm a huge fan of bellinis. I love peaches, and I love sparkling wine, so what's not to love about a bellini?! Nothing. That's what.

For the ultimate cool treat on a hot summer day, I turned the bellini into a peach bellini popsicle and made a poptail - that is a popsicle cocktail, if you will. And I must say, I'm pretty proud of myself for this recipe. It's just so fun!

These peach bellini popsicles with prosecco couldn't be easier to make! They literally have only 4 ingredients, including the bubbles you serve the pops with. You just blend the peaches, freeze, and serve with a glass of sparkling prosecco. Yum!

These fun bellini pops are the perfect way to toast the end of summer. They're a fun way to use up those sweet, juicy summer peaches in an adult celebration kind of way. (Labor Day poptail, anyone?)

Of course, if you want to make these kid-friendly (or pregnancy-friendly - I see you, mamas-to-be!), just replace the prosecco with peach flavored sparkling water. I like Perrier or La Croix.

Peach bellini popsicles with prosecco are the most refreshing way to use your summer peaches! Try these delicious, easy-to-make poptails this weekend for a fun adult treat! (mocktail option included)

Ingredients

Scale
  • 2 large fresh peaches, peeled and roughly chopped
  • 2 tsp sugar
  • 2 tsp fresh lemon juice
  • 2 cups prosecco, plus more for serving*

Instructions

  1. In blender or food processor, combine peaches, sugar, and lemon juice. Blend until combined. Some small chunks are fine.
  2. Add prosecco and stir.
  3. Pour mixture into popsicle molds and add place sticks. Freeze for 4-6 hours or until firm.
  4. To serve, place pops in champagne coupes and pour prosecco into glasses. Enjoy immediately.

Notes

*Use peach flavored sparkling water for mocktail option
