How to Make Parmesan Crusted Chicken

  1. Whisk the eggs and salt in a bowl. 
  2. Pour the flour into another bowl.
  3. In a third bowl, combine the Parmesan cheese, breadcrumbs, garlic powder, dried parsley, dried oregano, and chili flakes (if desired) and mix well.
  4. Dip each chicken fillet in the flour, then the egg mixture, then the Parmesan/breadcrumb mixture.
  5. Spray the air fryer basket with olive oil spray.
  6. Place a few of the crusted chicken fillets in the basket, leaving enough space between them to ensure air circulation.
  7. Spray the chicken with more olive oil spray; cook at 392 degrees F (200 degrees C) for 7 minutes or until golden brown, flipping once midway through the cooking time.
  8. Serve the chicken with a salad or your preferred side dish.

Ingredients

Scale
  • 1 pound chicken breast cut in fillets. 
  • 2 cups grated parmesan cheese
  • ½ cup breadcrumbs
  • 2 teaspoons garlic powder
  • 2 teaspoons dried parsley 
  • 2 teaspoons dried oregano
  • ½ teaspoon salt
  • 1 teaspoon chili flakes (optional) 
  • 1 cup white flour
  • 2 eggs
  • Olive oil in spray

Instructions

  • Start by cracking the eggs and whisk them with the salt in a bowl. 
  • In a second bowl put the flour. 
  • In a third bowl mix the parmesan cheese, the breadcrumbs, and the herbs and mix well. 
  • Pass each fillet through the flour, then eggwash, then parmesan and breadcrumbs mix. 
  • Once all of the fillets have been crusted, spray the air fryer basket with some olive oil and place a few of the crusted chicken fillets leaving enough space in between to ensure the air circulating. 
  • Spray them with more olive oil and cook for 7 minutes or until golden at 392 F/ 200 C flipping through mid-cooking. 
  • Serve alongside a salad or your preferred side dish. 

Notes

This parmesan-crusted chicken is perfect to slice and add to salads. The fried fillets can be stored in the fridge for up to 3 days. Reheat in the air fryer for 2 minutes.
