The change has turned weeknight vegetables into one of the fastest parts of dinner, with many recipes moving from oven racks to the air fryer basket.
Hot Air Replaces Long Oven Times
Instead of surrounding vegetables with the steady heat of a conventional oven, an air fryer circulates hot air around every piece. That constant airflow helps brown the outside while keeping the inside tender.
Carrots, broccoli, cauliflower, Brussels sprouts, and zucchini all develop roasted flavor without spending as much time in the oven.
Even-Sized Pieces Cook More Consistently
The technique begins before cooking. Cutting vegetables into similar sizes helps every piece finish at the same time instead of leaving some undercooked while others become too soft.
For carrots, many home cooks cut large pieces into shorter sections before slicing them lengthwise to create uniform thickness.
A Small Amount of Oil Does the Work
Roasted vegetables need only a light coating of olive or avocado oil along with salt and pepper before entering the air fryer. The oil helps the surface brown while allowing seasonings to cling to each piece.
Fresh herbs such as dill or parsley are often added after cooking to preserve their color and flavor.
Shaking the Basket Improves Browning
Instead of turning vegetables with a spatula, the air fryer basket is shaken partway through cooking. That movement exposes new surfaces to the circulating hot air and promotes more even browning.
Crowding the basket can block airflow, so many home cooks spread vegetables into a single layer or cook larger batches in stages.

Air fryers have changed more than frozen snacks and French fries. They have introduced a faster approach to roasting fresh vegetables while producing crisp edges and rich flavor without heating a full-size oven.
