Grilled Yellow Squash and Onions with Goat Cheese and Oregano

If you're anything like me, summer means throwing a protein and some veggies on the grill for simple, tasty meals with minimal cleanup most nights of the week. One of my favorite veggies to grill in the summer is yellow squash, especially if there's some growing in the garden. It's delicious grilled with nothing but olive oil, salt, and pepper, but I also like to dress it up a little - like I do in this dish - with fresh herbs and a bit of cheese. It's always a winning combo!

This grilled summer squash is a super flavorful side dish that goes beautifully with any meal that you're grilling this summer. It hits all the right notes: savory, smoky-sweet thanks to grilled onions, a bit of creamy tang from goat cheese, and a refreshing pop of herby oregano. The best part is it's so easy to make, especially if you've already got the grill fired up for something else!

The Ingredients

  • Yellow squash - You could also make this dish with zucchini
  • Onion
  • Fresh oregano
  • Goat cheese

How To Make Grilled Summer Squash and Onions with Goat Cheese and Oregano

  1. Cut the squash into thick rounds. Slice the onion.
  2. Toss the squash and onion with olive oil, salt and pepper.
  3. Grill the squash and onion over medium-low heat on both sides until the soften slightly, but still have some bite.
  4. Place the squash and oregano on a serving platter and top with crumbled goat cheese and roughly chopped fresh oregano.

Tip: When you're slicing the onion, cut from root to tip, with the root end still intact, so each slice has a little bit still holding it together. This makes it much easier to grill the onion.

Recipe Variations and Substitutions

  • Try this dish with other summer squash varieties, like zucchini or pattypan squash, instead of yellow squash.
  • If you don't have oregano, basil or parsley would work, too, though they will each have different flavors.
  • If you're not a fan of goat cheese, try feta or good quality parmesan.

Ingredients

Scale
  • 3 medium to large yellow squash
  • ½ medium white onion
  • 1 tbsp olive oil
  • Coarse sea salt
  • Freshly cracked black pepper
  • 2 tbsp fresh oregano leaves
  • ¼ cup crumbled goat cheese

Instructions

  1. Heat grill or grill pan to medium low heat.
  2. Slice squash crosswise into ½ inch thick rounds. Slice onion from root to tip into ½ inch pieces, leaving root end intact to keep onion slices together.
  3. Place squash and onions in a bowl and gently toss with olive oil. Season with salt and pepper to taste.
  4. Grill squash and onions until grill marks appear and vegetables are softened but not soggy, 3-5 minutes per side. Remove from heat.
  5. Place squash and onions on a serving platter. Top with oregano and crumbled goat cheese.

Notes

  • To make grilling even easier, you can grill the squash and onions in a vegetable basket or on the grill.
