One of my favorite veggies to grill in the summer is yellow squash, especially if there's some growing in the garden. It's delicious grilled with nothing but olive oil, salt, and pepper, but I also like to dress it up a little - like I do in this dish - with fresh herbs and a bit of cheese. It's always a winning combo!

How To Make Grilled Summer Squash and Onions with Goat Cheese and Oregano
- Cut the squash into thick rounds. Slice the onion.
- Toss the squash and onion with olive oil, salt and pepper.
- Grill the squash and onion over medium-low heat on both sides until the soften slightly, but still have some bite.
- Place the squash and oregano on a serving platter and top with crumbled goat cheese and roughly chopped fresh oregano.
Tip: When you're slicing the onion, cut from root to tip, with the root end still intact, so each slice has a little bit still holding it together. This makes it much easier to grill the onion.
Recipe Variations and Substitutions
- Try this dish with other summer squash varieties, like zucchini or pattypan squash, instead of yellow squash.
- If you don't have oregano, basil or parsley would work, too, though they will each have different flavors.
- If you're not a fan of goat cheese, try feta or good quality parmesan.

Ingredients
- 3 medium to large yellow squash
- ½ medium white onion
- 1 tbsp olive oil
- Coarse sea salt
- Freshly cracked black pepper
- 2 tbsp fresh oregano leaves
- ¼ cup crumbled goat cheese
Instructions
- Heat grill or grill pan to medium low heat.
