Grilled Caesar Salad With Shrimp

This grilled Caesar salad with shrimp is a delicious way to enjoy a healthy salad! Grilled romaine is topped with grilled shrimp, grilled onions, and grilled sourdough croutons for a delicious, light meal that is made entirely outside.

How is August almost over already?! I had so many big plans to share some new hatch chile recipes and back to school tips with you this month, yet here I sit with only a week left in the month and I have yet to buy a single hatch chile or come up with any back to school recipes. Sorry, y'all. It's been a busy month.

Grilled Caesar Salad With Shrimp

One thing I have mastered this month and all summer, is the art of a simple dinner. I've been in the land of all things peaches, corn, and tomatoes with a simple grilled protein this year. Since summer really doesn't end until late September here in Texas, I've still got at least a month left of fresh, easy meals cooked entirely on the grill.

P.S. - Ladies, don't be afraid to get your grill on. I've been grilling all of the recipes you've seen this summer without the help of my husband. Why? Because I can. Grilling is the easiest way to get a tasty meal on the table quick and without any mess, which is why I'm loving this grilled Caesar salad with shrimp!

Grilled Caesar Salad With Shrimp

If you've never grilled a salad, you're seriously missing out on the best way to eat your veggies. There is something so delicious about slightly wilted and charred romaine that elevates a simple Caesar salad to a whole never level.

Grilled shrimp, onions, and sourdough croutons all cooked right there on the grill with the lettuce make this salad taste so indulgent and hearty. The warmth of this yummy grilled Caesar salad with shrimp makes it the perfect meal for transitioning right into fall!

Don't forget to top it all off with good quality, freshly shaved parmesan cheese. A little goes a long way, and it makes a huge difference in taste. I like to dress mine lightly with my homemade Greek yogurt Caesar dressing, but if you have a favorite Caesar dressing, you can certainly use it too.

If ever there were an addictive salad, this grilled Caesar salad with shrimp would be it!

Grilled Shrimp Caesar Salad

This grilled Caesar salad with shrimp is a delicious way to enjoy a healthy salad! Grilled romaine is topped with grilled shrimp, grilled onions, and grilled sourdough croutons for a delicious, light meal that is made entirely outside.

Ingredients

Scale
  • ¾ lb raw shrimp, peeled and deveined
  • Juice of 1 lemon
  • 1 tbsp blackening seasoning
  • 1 tsp olive or avocado oil
  • 1 head romaine lettuce
  • ½ yellow onion
  • 2 slices whole grain sourdough bread
  • Freshly cracked black pepper
  • Kosher salt
  • Olive or avocado oil spray
  • 1 oz good quality parmesan cheese, shaved
  • ¼ cup homemade Caesar dressing

Instructions

  1. Mix cleaned shrimp with lemon juice in a medium bowl. Sprinkle with blackening seasoning and toss to coat. Drizzle with oil and stir again to coat. Thread shrimp onto skewers.
  2. Heat grill to high heat.
  3. Cut romaine in half lengthwise. Slice onion into coins. Sprinkle lettuce with salt and pepper. Spray lettuce, onion, and bread with oil.
  4. Place onion and bread on the top rack of the grill or on indirect heat. Place shrimp over direct heat. Cook 2-3 minutes per side and remove from heat.
  5. Place lettuce, cut side down, onto direct heat. Cook 2-3 minutes, or until grill marks appear and cut side is just slightly wilted. Remove from grill.
  6. Continue cooking onion until soft. Continue cooking bread until crispy (for croutons), then remove both from heat. Cut grilled bread into 1-inch cubes.
  7. To assemble salads, divide lettuce between 2 plates. Top with shrimp, grilled onion, and croutons. Shave parmesan over salads and serve with homemade Caesar dressing.
