How To Make This Simple, Classic Guacamole
- All you do is mash up some avocados, add a little onion and tomato, and throw some salt and lime in there, and you've got a bowl of the best stuff on Earth. Seriously, so easy.
- If you're feeling ambitious, add cilantro or jalapeño. If you're feeling lazy, just use avocado, salt and lime. Done.
Can Guacamole Be Made In Advance?
Yes and no. A few hours in advance is okay. Any more than that and it won't be the freshest. To keep my guacamole from browning while storing it, I squeeze a little bit of lime juice over the top and then press plastic wrap onto the surface. Blocking the oxygen helps to keep the avocado from oxidizing and turning brown. If you're storing leftover guacamole, you can apply the same technique. Don't worry if the surface turns brown overnight. Just scoop that part off, and you should still have fresh, green guacamole underneath (as long as it hasn't been too long).
What Should I Serve With Guacamole?
The more appropriate question is, what shouldn't I serve with guacamole? As a Texan, I put guac on just about anything, but my favorite things to pair with guacamole are:
- Chips and salsa (obviously).
- Tacos of all kinds. Especially breakfast tacos and zucchini black bean tacos.
- Quesadillas
- Enchiladas
- Eggs of any kind (like this migas breakfast bowl or green chile breakfast casserole).
- Literally anything remotely Mexican, Tex-Mex or Southwest-ish.

Ingredients
- 1 large ripe avocado
- Juice of ½ lime
- 2 tbsp diced red onion
- 2 tbsp finely diced tomato
- Pinch coarse sea salt
- Pinch garlic powder
- Optional extras: freshly cracked black pepper, chopped fresh cilantro, diced fresh jalapeño
Instructions
- Half the avocado and remove the seed. Use a spoon to scoop the flesh out into a bowl. Squeeze lime juice onto avocado. Mash avocado with a fork or potato masher.
- Gently stir in onion, tomato, salt, and any other ingredients you wish to add.
- Serve immediately or press plastic wrap onto surface and place in the refrigerator until ready to serve, up to 4 hours.
