Ingredients
- ½ tsp olive oil
- 2 cloves garlic, minced
- 1 cup dry quinoa
- 2 cups vegetable or chicken broth
- ½ tsp lime zest
- 3 tbsp freshly squeezed lime juice
- ¾ cup fresh cilantro, finely chopped
- Salt to taste
Instructions
- In a medium saucepan, heat oil on low heat. Add garlic and sauté until soft, about 30 seconds. Add quinoa and stir, cooking, until toasted, about 1 minute.
- Add broth, cover, and bring to a boil. Lower heat and simmer 15 minutes.
- While quinoa is cooking, zest and juice lime and chop cilantro.
- Once quinoa is cooked, fluff with a fork, then add lime zest, juice, cilantro and salt to taste. Gently stir to combine. Serve warm.
- Refrigerate leftovers in an airtight container.
