    Baked Eggs Are Moving Beyond the Breakfast Table

    Eggs have traditionally been served alongside toast, bacon, or pancakes, but more home cooks are turning them into one-pan meals that work just as well for lunch or dinner. Baked egg skillets combine eggs with vegetables, potatoes, and tomato sauce, transforming a familiar breakfast ingredient into a hearty meal any time of day.

    The approach keeps preparation simple while making use of ingredients many kitchens already have on hand. Everything cooks in a single oven-safe skillet, creating a meal that's easy to prepare and serve.

    Tomato Sauce Creates the Base

    Instead of frying eggs in butter or oil, baked egg skillets begin with a layer of seasoned tomato sauce. As it heats, the sauce thickens and becomes the cooking liquid for the eggs, adding rich flavor without requiring a separate sauce or gravy.

    Small wells are formed in the sauce before the eggs are cracked into place, allowing each one to cook evenly in the oven.

    Potatoes Turn Breakfast Into a Complete Meal

    Adding potatoes changes the dish from a light breakfast into something substantial enough for lunch or dinner. Small creamer potatoes cook quickly and absorb the flavors of the tomato sauce while providing texture alongside the soft eggs.

    Peppers and herbs complete the skillet without adding extra pans or complicated preparation.

    Unlike traditional breakfasts that often require several pots and pans, baked egg skillets come together in a single oven-safe dish. Once the ingredients are assembled, the oven finishes the cooking while the eggs set and the vegetables soften.

    That simplicity has made the method popular for both family meals and weekend brunches.
