For a fun date night at home, one of my favorite meals to make with my husband is homemade pizza. It's a fun and relaxing activity to do together, and makes a casual summer meal with a simple salad and a glass of wine. One of my favorite pizzas in the summer is this delicious blackberry BBQ chicken flatbread!

And they look gorgeous! If you use leftover chicken and pre-made pizza dough, the whole thing comes together super quick - in less than 30 minutes! It's the perfect summer appetizer or casual meal to eat outside with your favorite person.
What is the best pizza dough to use for flatbread?
I like this recipe for quick thin-crust pizza dough by King Arthur Flour. I use white whole wheat flour to make it whole grain, and it works out beautifully. But any thin-crust pizza dough you like will work! In a pinch, you can also use traditional flatbread, such as naan, or a pre-baked flatbread crust. Just crank the heat on your oven and decrease your baking time a little.
How To Make Blackberry BBQ Chicken Flatbread Pizza
- Preheat the oven or grill with a pizza stone in it.
- Roll out your dough onto a piece of parchment.
- Spread BBQ sauce onto the dough, leaving the edges bare. Top with torn fresh mozzarella, chicken, sliced red onion, and blackberries.
- Bake for 10-15 minutes, or until cheese is bubbly and crust is crisp.
- Remove from the oven and top with arugula.
Tips & Ingredient Substitutions
- If you don't have a pizza stone, you can bake your pizza on an upside-down baking sheet.
- Place the dough between two sheets of parchment to make rolling easier.
- If you're grilling the pizza, remove it from the parchment and place it directly on the grill for the last few minutes of cooking.
- I like to use fresh mozzarella torn into little pieces, but you can also use shredded mozzarella if that's what you have.

Ingredients
- 1 unbaked pizza dough (I use my whole wheat pizza dough)
- ¼ cup BBQ sauce of choice (try my homemade Texas BBQ sauce!)
- 4 oz fresh mozzarella cheese
- ¼ cup shaved red onion
- 4 oz grilled chicken, cut into bite-sized pieces (leftover chicken is great for this!)
- ½ cup fresh blackberries
- fresh arugula, for topping (optional)
Instructions
- Place a pizza stone in the oven and preheat oven to 500° F. (Or, if you're using a grill, preheat the pizza stone in it to 500°F.)
- Roll out the dough into a thin circle on a piece of parchment.
- Spread BBQ sauce onto the dough. Top with torn mozzarella cheese, sliced onion, chicken, and berries.
- Carefully transfer parchment to preheated pizza stone. Bake (in the oven or grill) for 10-15 minutes or until cheese is melted and bubbly and pizza crust is crisp. If you're using the grill, yo may remove the pizza from the parchment and place it directly on the grill for a few minutes at the end, if you'd like.
- Remove pizza from the oven and sprinkle with arugula and drizzle with more BBQ sauce. Cut and serve.
