White Chocolate Cranberry Bliss Balls

Cranberry and white chocolate will forever be one of my favorite flavor combinations, especially around the holidays. It's just so festive, isn't it? With all of the running around you're likely doing during the holidays, it's important to stay fueled with healthy snacks to keep you energized, focused, and feeling good. So I created these white chocolate cranberry bliss balls to help power you through this busy season.

  • These little bites of bliss are simply delicious! They taste just like cranberry white chocolate cookies, but they're made with nutritious ingredients.

  • They're healthy and filling with whole grains, nuts, seeds, and fruit that provide fiber, plant protein and healthy fat - a winning combination for satisfying snacks.

How To Make White Chocolate Cranberry Bliss Balls

These snack balls are super easy to make with little more than a food processor (I have this full-sized one from Cuisinart, and I also love this mini one if I'm going to half the recipe.).

  • First, grind the oats in the food processor until they resemble a coarse flour.
  • Add dates, flaxseed, cashew butter, cinnamon and salt. Pulse to combine into a dough, adding water one tablespoon at a time as needed. The dough is the right consistency when it forms a ball in the food processor.
  • Add the dried cranberries and white chocolate chips and pulse just briefly to work into the dough.
  • Scoop out the dough by the tablespoon (or with a small cookie scoop) and roll into balls. Place them on parchment or waxed paper to set.
  • If you want a white chocolate drizzle on the top, melt the white chocolate in the microwave in 30-second intervals, stirring in between each, until smooth, then drizzle over the balls.
  • Let them set in the refrigerator before storing in an airtight container.

Pro Tips For Making White Chocolate Cranberry Bliss Balls

  • If your dates are dry, soak them in hot water before using them (just be sure to drain them first!).
  • Spray your measuring cup with cooking spray before measuring the cashew butter to help it come out of the cup easily.
  • If you accidentally add too much water and the dough is too wet, add in a few more oats and pulse.
  • Use wet or oiled hands when you're rolling into balls to keep the dough from sticking to you.
  • Be careful not to overheat the white chocolate as you melt it as it tends to clump up easily when it gets too hot. If this happens, you can add just a touch of coconut oil to the mixture and stir to try to smooth it out. If that doesn’t work, you'll have to toss it and try again.

Ingredient Substitutions and Add-Ins

  • I love cashew butter in these white chocolate cranberry bliss balls because it makes them taste more like cookies, but you can substitute another natural nut butter if you'd like, such as almond butter or sun butter for a nut-free version.
  • You can use chia or hemp seeds in place of flaxseed. They don't need to be ground, just add them straight in!
  • If you can find dairy-free white chocolate, these will be dairy-free and vegan.
  • Substitute dark chocolate for white chocolate if you prefer!
  • If you want to boost the protein a little, add a scoop of unflavored collagen or your favorite protein powder to the food processor with the oats.
  • To make these into lactation bites, add a touch of brewer's yeast to the dough with the oats. Just be careful not to over-do it, as the flavor is very strong! Stick with just 1-2 teaspoons at first.

Ingredients

Scale
  • 1 cup rolled oats (certified gluten-free, if necessary)
  • ½ cup pitted dates (about 6 medjool dates)
  • 2 tbsp ground flaxseed
  • ¼ cup natural cashew butter (the runny kind)
  • ½ tsp ground cinnamon
  • Pinch salt
  • Up to ¼ cup water
  • ½ cup dried cranberries
  • ¼ cup white chocolate chips

Instructions

  1. In a food processor, pulse oats until they are well ground.
  2. Add dates, flaxseed, cashew butter, cinnamon and salt. Process until a dough forms, adding a little water at a time as needed to make it smooth-ish.
  3. Add cranberries and white chocolate chips to the food processor and pulse lightly to just incorporate them.
  4. Scoop out dough by the tablespoon and roll into balls. Use wet or oiled hands to prevent sticking. Place onto waxed paper or parchment to set.
  5. Optional: melt additional white chocolate chips according to package directions (or in 30-second intervals in the microwave, stirring in between each until smooth) to drizzle over the tops of balls.
  6. Place balls in the refrigerator to set.
  7. Store in the fridge or freezer in an airtight container.
