White Chocolate Cranberry Bliss Balls

White chocolate cranberry bliss balls filled with cranberries and white chocolate are the perfect portable, healthy snack to keep you fueled this holiday season! Made with nutritious ingredients like oats, dates, and cashew butter, they're both filling and delicious. (gluten-free, vegetarian)

Ingredients

  • 1 cup rolled oats (certified gluten-free, if necessary)
  • 1/2 cup pitted dates (about 6 medjool dates)
  • 2 tbsp ground flaxseed
  • 1/4 cup natural cashew butter (the runny kind)
  • 1/2 tsp ground cinnamon
  • Pinch salt
  • Up to 1/4 cup water
  • 1/2 cup dried cranberries
  • 1/4 cup white chocolate chips

Instructions

  1. In a food processor, pulse oats until they are well ground.
  2. Add dates, flaxseed, cashew butter, cinnamon and salt. Process until a dough forms, adding a little water at a time as needed to make it smooth-ish.
  3. Add cranberries and white chocolate chips to the food processor and pulse lightly to just incorporate them.
  4. Scoop out dough by the tablespoon and roll into balls. Use wet or oiled hands to prevent sticking. Place onto waxed paper or parchment to set.
  5. Optional: melt additional white chocolate chips according to package directions (or in 30-second intervals in the microwave, stirring in between each until smooth) to drizzle over the tops of balls.
  6. Place balls in the refrigerator to set.
  7. Store in the fridge or freezer in an airtight container.

Notes

  • If you're dates are dry, soak them in hot water before using them (just be sure to drain them first!).
  • Spray your measuring cup with cooking spray before measuring the cashew butter to help it come out of the cup easily.
  • If you accidentally add too much water and the dough is too wet, add in a few more oats and pulse.
  • Use wet or oiled hands when you're rolling into balls to keep the dough from sticking to you.
  • You can substitute another natural nut butter for the cashew butter if you'd like, such as almond butter or sun butter for a nut-free version.
  • You can use chia or hemp seeds in place of flaxseed. They don't need to be ground, just add them straight in!
  • If you can find dairy-free white chocolate, these will be dairy-free and vegan.
  • Substitute dark chocolate for white chocolate if you prefer!
  • If you want to boost the protein a little, add a scoop of unflavored collagen or your favorite protein powder to the food processor with the oats.
  • To make these into lactation bites, add a touch of brewer's yeast to the dough with the oats. Just be careful not to over-do it, as the flavor is very strong! Stick with just 1-2 teaspoons at first.
