This pear collins is my fall twist on the traditional Tom Collins cocktail, which typically consists of lemon juice, gin, and sugar syrup and club soda. Instead of lemon juice and sugar syrup, I sweeten things up with homemade pear puree made with just a touch of honey and lemon juice. To play into the botanical notes of gin even more, I garnish it with a fresh thyme sprig. Though simple to make, it's anything but basic!
The Ingredients
- Pear puree - Made with just pears, honey and lemon juice. You can also sub in pear butter in a pinch. I've even used my vanilla bean pear butter and though unexpected, it was delicious!
- Gin
- Club soda - You can also use seltzer water or sparkling water, such as Topo Chico.
- Fresh thyme - optional, but pretty and delicious as a garnish!
How To Make It
Make the Pear Puree
- Heat the diced pear, lemon juice, honey and water in a small saucepan over medium-low heat. Gently simmer until the pears are soft, about 10 minutes, adding more water if needed to prevent sticking.
- Carefully add the pears and liquid to a food processor or blender (or use an immersion blender) and blend until smooth.
- Let the puree cool completely before using it, or store in the refrigerator until you're ready.
Make the Cocktail
- Add gin and pear puree to a shaker with ice. Shake well to combine.
- Strain the mixture into a highball glass filled with ice.
- Top with club soda or sparkling water, and garnish with thyme.
Can It Be Made Ahead?
Yes, I recommend making the pear puree ahead! You can store it in the refrigerator for 3-4 days in a jar or other sealed container. That way, it's super easy to whip up a pear collins on a whim.
