Sweet and spicy dressings are where it's at - am I right? Raspberry chipotle dressing is a classic favorite here in the southwest, but store-bought dressings are typically loaded with sugar and salt. Making your own with just a few simple ingredients is easy and healthier!

Why You'll Love This Raspberry Chipotle Dressing

This raspberry chipotle dressing is simply delicious with smoky, fiery chipotle peppers, sweet - tart fresh raspberries, a hint of lime and a touch of honey. It's much lower in sugar than typical store-bought dressings and uses just 5 ingredients and a food processor!

How To Make Raspberry Chipotle Dressing

    1. Add the raspberries, chipotles, lime juice, olive oil, honey, salt and pepper to a food processor or blender.
    2. Blend until smooth.
    3. Taste and adjust if needed.

    Tips & Ingredient Substitutions

    • You can use frozen, thawed raspberries in place of fresh.
    • You can use maple syrup in place of honey.
    • If you are sensitive to spice, start with 2 chipotles. Then taste and add another if you'd like.
    • Dressing will last up to 4 days in the refrigerator.
    • If the raspberry seeds bother you, you can strain them out with a fine mesh strainer after blending.
    • Canned chipotles in adobo can be found next to the other canned chiles in the Hispanic aisle of your grocery store. If you can't find them there, you can always get them on Amazon!
    • Leftover canned chipotles will last up to 3 months in an airtight container in the refrigerator.

    Ingredients

    Scale
    • 1 cup fresh raspberries
    • 3 chipotle peppers canned in adobo
    • 2 tbsp fresh lime juice (from 1 lime)
    • 3 tbsp olive oil
    • 1 tbsp honey
    • ¼ tsp sea salt
    • ¼ tsp black pepper

    Instructions

    1. In a blender or food processor, combine the raspberries, chipotles, lime juice, olive oil, honey, salt and pepper. Blend until smooth.
    2. Taste and adjust the spice level as needed by adding more chipotle or raspberries if needed.
    3. Store in an airtight container in the refrigerator for up to 4 days.

    Notes

    • Frozen, thawed raspberries may be used in place of fresh.
    • You can use maple syrup in place of honey.
    • If you don’t like too much spice, I recommend starting with two chipotles, then tasting the dressing after blending. If it needs more spice, add another chipotle.
    • If the raspberry seeds bother you, you can strain the dressing through a fine mesh strainer after blending.
    • Canned chipotles in adobo can be found next to the other canned chiles in the Hispanic aisle of your grocery store. If you can't find them there, you can always get them on Amazon!

I very much enjoyed the flavor of this dressing but found that using even a single chipotle pepper created too much heat. Even for Jim, who will eat anything! Next time, I’ll use a dollop of chipotle paste instead.
