How To Make Raspberry Chipotle Dressing
- Add the raspberries, chipotles, lime juice, olive oil, honey, salt and pepper to a food processor or blender.
- Blend until smooth.
- Taste and adjust if needed.

- You can use frozen, thawed raspberries in place of fresh.
- You can use maple syrup in place of honey.
- If you are sensitive to spice, start with 2 chipotles. Then taste and add another if you'd like.

Ingredients
- 1 cup fresh raspberries
- 3 chipotle peppers canned in adobo
- 2 tbsp fresh lime juice (from 1 lime)
- 3 tbsp olive oil
- 1 tbsp honey
- ¼ tsp sea salt

I very much enjoyed the flavor of this dressing but found that using even a single chipotle pepper created too much heat. Even for Jim, who will eat anything! Next time, I’ll use a dollop of chipotle paste instead.
