When I say this ham sandwich is amazing, I feel like I’m slightly underselling it. It’s like an explosion of flavors and textures in one glorious, meal-worthy sandwich. It’s got everything you need in a sandwich:

- Hot and toasty – an absolute must if I’m going to eat a sandwich.
- Melty gouda. Yum.
- A sweet and spicy apple chutney that’s super easy to make.
- Arugula – the best green for maximum flavor, in my humble opinion.
- Spicy mustard for another little flavor kick.

Leftover Ham and Gouda Sandwich with Spicy Apple Chutney

Ingredients
For Ham and Gouda Sandwiches:
- 6 slices Smithfield Spiral Sliced Ham
- 1/2 tsp olive oil
- 1 tsp butter
- 4 slices whole grain bread
- 2 oz. gouda, thinly sliced
- 1 tbsp. spicy brown mustard
- 1/2 cup baby arugula
For Apple Chutney:
- 1/2 tsp olive oil
- 1/2 apple
- 1/4 onion
- 3 tbsp. apple cider vinegar
- 1 tsp honey
- 1/4 tsp red pepper flakes*
- 1/8 tsp ground cloves
- Pinch sea salt
- Pinch freshly cracked black pepper
Instructions
- In a small saucepan, heat 1/2 tsp olive oil on medium heat. Add onion and apple. Stir and cook until onion and apple are softened, about 5 minutes. Add remaining ingredients and stir to combine. Turn heat to low and simmer 10 minutes, stirring occasionally.
- Heat 1/2 tsp oil in a large skillet over medium heat. Add ham and cook until warmed through. Remove ham and wipe out pan.
- Butter one side of each slice of bread. Place 2 slices butter-side down in the warm skillet. Layer bread with ham, gouda, arugula and apple chutney. Spread mustard on unbuttered sides of remaining slices of bread. Place mustard side down on top of sandwiches in the pan. Cook until the bottom slice is golden.
- Flip sandwiches and cook until second side is golden. Remove sandwiches from pan and serve hot.
Notes
*If you like things on the less-spicy side, reduce the red pepper flakes by half.
