Instant Pot Maple Pumpkin Spice Steel Cut Oatmeal

Well, It's officially cold. Time to break out the boots and dust off the slow cooker (or Instant Pot!) for all the soups and cozy comfort food, like this maple pumpkin spice oatmeal.

Why You'll Love This Pumpkin Spice Oatmeal

This Instant Pot maple pumpkin spice oatmeal is a big bowl of the warm fuzzies. Perfectly cooked creamy steel-cut oats with a whole cup of real pumpkin puree and warm fall spices sweetened with pure maple syrup - does anything sounds more cozy and comforting? This oatmeal is made in the Instant Pot, so it's totally hands-off. It takes all of about 2 minutes to stir together and get started, and you don't have to worry about stirring to prevent spill-overs on the stove or forgetting about it and burning it all to the bottom of the pot. (Don't act like you've never done that.)

How To Make Instant Pot Maple Pumpkin Spice Oatmeal

It could not be any easier. 

  1. Stir together the milk, water, pumpkin, maple syrup, spices and oats in the bowl of the Instant Pot.
  2. Lock the lid, close the vent, and pressure cook on High for 4 minutes. 
  3. Let the pressure release naturally, give it a stir, and enjoy!

While this delicious maple pumpkin spice oatmeal only has a 4 minute cook time, you still have to wait for the Instant Pot to come to pressure before it cooks, and it has to naturally release pressure, so total time is about 20 minutes. Which is still quicker and easier than stovetop steel-cut oats. And it sure is much easier!

Tips For Making The Perfect Bowl of Oatmeal in the Instant Pot

  • This recipe can be made with dairy or nondairy milk. For a vegan version, use your favorite nondairy milk.
  • For creamier oats, use all milk and no water.
  • Make sure the 'keep warm' function is turned off so the pressure will come down more quickly at the end.
  • Taste the oatmeal after cooking and add more spices or maple syrup if needed.
  • You can also make this maple pumpkin spice oatmeal with rolled oats instead of steel-cut oats. Just reduce the water to 1 cup and reduce the cooking time to 3 minutes.

Can This Recipe Be Made in the Slow Cooker?

Yes! If you'd like to use your slow cooker, follow the same recipe, but cook in your slow cooker for 7-8 hours on low. You can even cook it while you're sleeping!

How To Store Leftovers

One pot of this oatmeal makes 4-5 servings, so you'll have enough to eat for breakfast all week. You can even meal prep it on the weekend. What could be better? To store, make sure oatmeal is cool before pouring into an airtight container. Store in the refrigerator for up to 5 days. You can also freeze extra oatmeal in perfect single portions in silicone blocks (like these!). Once frozen, pop them out of the blocks and store in an airtight container or freezer bag. 

To reheat oatmeal, microwave in a microwave-safe bowl for 60-90 seconds. Stir in more milk if needed, top with your favorite toppings, and enjoy!

Ingredients

Scale
  • 1 cup dry steel cut oats
  • 1 cup milk of choice
  • 1 ¾ cups water
  • 1 cup pumpkin puree
  • 2 ½ tsp ground cinnamon
  • 1 tsp ground nutmeg
  • ¼ tsp ground ginger
  • ¼ tsp salt
  • ⅓ cup pure maple syrup

Instructions

  1. In the bowl of your Instant Pot, stir together all ingredients.
  2. Close the lid and set the vent to 'Sealing'. Select 'Pressure Cook' and 'High' and set timer for 4 minutes.
  3. When the oatmeal is done cooking, let the pressure release naturally, about 10 minutes.
  4. Stir the oatmeal and serve with more maple syrup to taste, milk, butter, or any other topping you like.

Notes

  • This recipe can be made with dairy or nondairy milk. For a vegan version, use your favorite nondairy milk.
  • For creamier oats, use all milk and no water.
