Instant Pot Maple Pumpkin Spice Steel Cut Oatmeal

Cozy up with a bowl of this super simple and delicious Instant Pot maple pumpkin spice steel cut oatmeal. Lightly sweetened with maple syrup and made with real pumpkin, It's just the healthy fall breakfast to warm you up on cold mornings! Includes slow cooker instructions. (gluten-free, nut-free, vegan and dairy-free option)

Ingredients

  • 1 cup dry steel cut oats
  • 1 cup milk of choice
  • 1 3/4 cups water
  • 1 cup pumpkin puree
  • 2 1/2 tsp ground cinnamon
  • 1 tsp ground nutmeg
  • 1/4 tsp ground ginger
  • 1/4 tsp salt
  • 1/3 cup pure maple syrup

Instructions

  1. In the bowl of your Instant Pot, stir together all ingredients.
  2. Close the lid and set the vent to 'Sealing'. Select 'Pressure Cook' and 'High' and set timer for 4 minutes.
  3. When the oatmeal is done cooking, let the pressure release naturally, about 10 minutes.
  4. Stir the oatmeal and serve with more maple syrup to taste, milk, butter, or any other topping you like.

Notes

  • This recipe can be made with dairy or nondairy milk. For a vegan version, use your favorite nondairy milk.
  • For creamier oats, use all milk and no water.
  • Make sure the 'keep warm' function is turned off so the pressure will come down more quickly at the end.
  • Taste the oatmeal after cooking and add more spices or maple syrup if needed.
  • You can also make this maple pumpkin spice oatmeal with rolled oats instead of steel-cut oats. Just reduce the water to 1 cup and reduce the cooking time to 3 minutes.
  • Store leftovers in the refrigerator in an airtight container. Leftovers may also be frozen.
  • Slow Cooker Instructions: Follow instructions as written, but cook 7-8 hours on low in the slow cooker.
